I just love this plant-based low-fat cookbook, The Optimal Diet. I found it by browsing the "Celebrtiy Tips" section of this Kickstart site. After reading Dr. Hans Diehl's page, I ordered his cookbook. I especially recommend this for us newer plant-based members. The book is colorful, has pictures, the print is large, the pages lay flat when open, the recipes are easy to follow, most ingredients are familiar. I think the key to our success is finding those delicious recipes that we look forward to eating and I believe this cookbook deserves a space on all our shelves.[b]

Speaking of! Hans Diehl has some amazing work. As a matter of fact I am presenting all this month at the CHIP program (Dr. Diehl's Coronrary Health Improvement Program) and last night's theme was Optimal Diet - perfect!

Another great cookbook - besides any of the McDougall stuff - is Colleen Patrick-Goudreau's Color Me Vegan. Not long ago I did a Teleclass about the book with Colleen as my Guest.

I do a lot of macrobiotic vegan cooking, it works for me. If any of the recipes call for fish or a meat I just replace it with something else.

Those are all I can think of off the top of my head.

I was surprised to hear that our local small town hospital is going to start the CHIP program. They are in the train the trainer phase. I wonder how they heard about CHIP and who at the hospital got it going.

I usually don't cook directly from a recipe but rather use them as inspiration or to get a general idea of good food combinations. Since I try to eat what is in season, I substitute out listed ingredients for what I have on hand.

One of my go-to cookbooks is Table for Two: Meat- and Dairy-Free Recipes for Two by Joanne Stepaniak. Since I am usually only cooking for myself and my son (who is 6 and usually won't eat it anyway) it is great to have scaled down recipes. (My husband works off hours and generally only eats canned or frozen foods. Sometimes he will eat leftovers of what I cooked.) Joe Stepaniak also has a cookbook called The Ultimate Uncheese Cookbook that has awesome recipes for vegan "cheeses."

I got The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray for Christmas and it has quick vegan recipes. The 5-Ingredient Vegetarian Gourmet by Nava Atlas is good as well. Some of the recipes have cheese in them, but you can substitute or omit. I like this one because I like simplicity. When I look at a recipe that has half a page of ingredients I get discouraged and usually skip it.

I just finsihed Dr. Barnard's new book "21-Day Weight Loss Kickstart".[b][u]. The first 2/3rds of the book explains the program. The information reinforces what we are learning through this Kickstart, but more emphasis on weight loss. The last 1/3rd of book has new recipes. I've already tried the tasty Tuscan Harvest Soup.

Thanks for posting, I am on the waiting list
at the library for the book. I just moved up to
# 4 out of 20. Popular book, now I can't wait
to try the Harvest soup.

Will he have a followup cookbook?

I will Rip from Engine 2 had a followup cookbook.
I loved his Engine 2 book and the recipes were
tasty and easy to prepare.

I also really like the "Engine 2 Diet" and would look forward to a follow-up book. But in the meantime check out Rip's father's book " Prevent and Reverse Heart Disease" by Caldwell B. Esselstyn, Jr.,MD. Don't assume the book is just for people with heart problems- his message is on par with Dr. Barnard and Kickstart. Half the book is full of tasty recipes. I understand the entire Esselstyn family eats plant-based low-fat, and the recipes in both books are equally easy and delicious.
