Baked White Potatoes ?

A baked white potato with broccoli is vegan BUT white potato is not the greatest option in terms of glycemic action. Eating the skin adds some positives to it but it's still not the best option. Still, in some situations, it's better than other things. For example, some fast food places serve baked potatoes with toppings and that's better than a fried burger and such. Save it off for a treat, maybe, rather than a regular 'go to' option.

The answer to the first question is - it depends Smile. If you're making a baked potato and put steamed broccoli in it that has not been swimming in cream and cheese then, yes, it's vegan.

Regarding baked white potatoes, here's a thread in the McDougall boards about potatoes that you might find interesting:

Dr. McDougall and Jeff Novick are big supporters of the potato and its nutritional value. I think the problem with white potatoes is not the potato itself as much as what you put on the potato Smile.

For myself, I've begun to make my own mashed potatoes with either white or sweet potatoes every evening (just adding a dash of low fat soy milk and mustard for flavor) and I find it's a delicious and satisfying dish for me.

hi Djuna.. I used to like mixing white and sweet potatoes 1/2 & 1/2 when mashing.. they really blend quite well.

I second the recommendation to read the MCDougall thread on potatoes. Millions of people have lived very healthy lives on nothing but white potatoes as their main dietary staple. The potato is much maligned, for no good reason in my opinion. Indeed, it is what you put on it that makes it an unhealthy food choice. Nix the sour cream, cheese, bacon bits, etc. Very Happy

I suppose it depends - my take is based on my own experience being a type 2 diabetic - white potato is a disaster (baked or mashed or baked fries or sliced, diced, made into a pie...doesn't matter). It does contain some good nutrients but for diabetics it's touchy - I know (online) some folks who can eat small amounts of white potato okay, others can't; but then some can eat brown rice and others can't. So, bottom line, I guess is that your mileage may vary. If you're not diabetic, enjoy. If you are diabetic, TEST and find out if it works for you. Glycemically, a small baked sweet potato is generally a better choice than a small baked white potato (if my recollection of the info at this early hour is accurate).

Are you able to eat sweet potatoes ??

Good point, Deb. It's all a matter of personal preference and what works best for you. For example, I recently found out that I can't eat buckwheat, as it gives me gas. I have no problem with grains at all (not gluten-intolerant) but for some reason, buckwheat just doesn't sit well with me (literally Wink).

Sweet potatoes baked in small amounts are okay (provided I watch the rest of the meal, no other starches at all). White potatoes cause a major glucose spike - a simple tossed salad (simple vinegar splash on top, no fat) with a baked potato on the side will get me post meal glucose readings in the 200 range. No good. So I just skip them. I will admit, though, that I do on occasion, finish off a bit of my son's potato skin if he has a baked potato and eats out the innards and leaves some of the outsides. Those aren't as big a deal - plenty of flavor, fiber, nutrients, without the low fiber starchy innards.

I think sweet potato itself (the innards) has more fiber to start with than white potato and that can make a big difference in the glycemic effect it has.

I think our meter is our best friend. I am trying some variations on the basic vegan plan and test test test! If I see an increase in fasting glucose or radical increase in postprandial glucose, I back off from that food. I haven't eaten a white potato yet since starting this diet, but I will.

I agree totally - that's how I know that white potato is not my friend. At some point, probably once I'm back on track with the kickstart (things slid a bit over the holidays) and lose a bit more weight, I might do some trials with small baked potatoes and such and see if I can tolerate them better now.
