What is your food today? Wed Jan 5

Hi All,
This is great.. it's like going to a pot luck supper every day!! Or maybe it's like that co-worker who pops in just to see what you are eating.

It certainly has inspired me to try new foods soon. A green smoothie is on my list during the next week..

so anyway today i lucked out... i have enough leftovers i don't have to cook.. the microwave is my friend.

it will be cereal or oatmeal for breakfast
fruit oranges & bananas for snacks
left over surprize soup for lunch(hard to tell which soup it is when in the freezer)
dinner is the leftover quiona/broccoli i made yesterday..

so does anyone have a great way to tell what those frozen items are in the freezer? do you color code tops? label? if there is a secret please share!

Breakfast: oatmeal with raisins, craisins, scattering of crumbled pecans for texture, sprinkle of 'apple pie spice' mix, and a splash of unsweetened almond milk (I make my oatmeal really thick then add a bit of plant milk to thin it back down again - weird, I know LOL)

Lunch: not sure yet, very possibly a whole wheat bagel with hummus and veggies

Dinner: Hubby's lovely veggie chili
[Got bogged down in errands so no time to cook beans this afternoon. Brown rice, garbanzos (already cooked), and steamed broccoli tonight - chili tomorrow!] [LOL Re-editing again: we're going to make the cheeze sauce and have that with rice and broccoli!]

Snacks: apple, banana

Morning: Smoothie with banana, low fat soy milk, carob powder, flaxseeds, date, honey and ice

Mid-Morning: bowl of cooked whole grain couscous with a dash of maple syrup

Lunch: stew made of mixed veggies, corn, potatoes, beans, crushed tomatoes, tomato paste, and fresh Italian herbs over brown rice

Evening: big salad with beans and lemon juice/balsamic vinegar; mashed potatoes

Snack: whole grain pretzels and dried fruit (a serving of each - I don't overdo it on these Smile).

Bugsmom, I actually read somewhere that it's healthier to use non-animal milks (soy, almond, rice, etc.) not in the cooking itself but to add them after the cooking is done. Because of this, when I add nut milks or soy milk to something hot like oatmeal, I always do it after the oatmeal is cooked, like you.

We just write on the package with a sharpie. It pretty much washes off once we thaw the contents and then wash the container. Haven't had good luck with labels staying stuck in the freezer.

Breakfast today was oil-free hash browns with mustard greens. 1/2 banana. And my one cup of coffee I allow myself per day.

Snack: grapes

Lunch: leftover teriyaki rice & veggies (edamame, corn, broccoli, carrots, onions, peppers) from last night's supper. Cut up veggies

Snack: air popped popcorn, maybe an apple

Supper: curried cauliflower, potatoes and veggies over brown rice. I will make enough for lunch tomorrow and maybe the day after that too.

I write with a sharpie marker on masking tape to label containers in the freezer. It holds up well.

When I bought my canning jars, they came with these nifty little labels, which I use to write the date and contents and put on top of my freezer containers.

I had steel cut oatmeal and half a grapefruit for breakfast. Lunch will be leftover hoppin' john with brown rice that I have added some Italian dressing to. I also brought a tangerine with me. I haven't decided what tonight's dinner will be ... but I have a zucchini and a red pepper in the fridge, along with some fresh parsley that won't last much longer, so probably something incorporating those.

Probably the most nutrition-laden meals I fix are the soups I make from scratch. I experiment with them and "invent" my own recipes. One of those soups will be my dinner.

Today has been a bit of a disaster. Bowl of pasta with a bit of basil olive oil for breakfast as I had no more fruit in the house. Some cookies as a snack. Lunch was a bag of chips..... yes, you read this right.... a bag of chips. I went to the market to get veggies and all the veggie stands were invisible (Why do they all go on vacation at the same time?). Then went to healthfood store but by that time I was soooo hungry that I went for the bag of chips. Oh well... I did go to the gym this morning. Dinner will be mashed steamed pumpkin/butternut squash/sweet potato with ginger, garlic, oregano, cinnamon and rice milk topped with an onion, leek, zucchini, carrots and tomato sauce mixture. Had it two days ago and it was yummie yummie yummie. All I need to do is defrost and heat up. But no microwave for me. Just stove top heating.

deb.. i always have thick oatmeal and then put soymilk over it.. when i was a child my mom would serve oatmeal; i hated it.. but then she didn't put all the stuff in it that i see everyone here does. I even like with walnuts & soymilk. I guess i was the same now as a child.. just don't like mush.

hey who would have thought? couscous with maple syrup??? wow so simple and sounds good!

i think i will try the masking tape on the freezer packages.. i use tupperware type stuff and the tape would come off ok. might leave some sticky stuff on it. maybe i will layer the tape...

kaykay.. going out hungry to the store reminds me of the robot on lost in space waving arms saying "danger will robinson danger" spining around in circles.. lol.. better days are coming..

breakfast: Strawberry smoothie with vanilla soymilk. Oatmeal with dried cranberries, little sugar, lots of cinnamon and soymilk (made enough oatmeal for dinner).

snack: clementine

lunch: strawberry smoothie with vanilla soymilk (make enough for two this morining). 2 clementines and an apple.

snack: apple

dinner: this morning's oatmeal

snack: pepitas! (made them last night.)

Hmmm. I snack a lot Shocked

Wow! Some of these meals sound so good. I'm going to try a few. Let's keep going with sharing our food for the day, it's inspirational. Here's my day:

BRKFST: Oatmeal with Splenda and cinnamon

LUNCH: left over veggie spaghetti

SNACK: Hummus & Cuke on tortilla

DINNER: Curry lentil Soup

Snack: FF Bean Dip and baked chips

So my dinner changed from leftovers to mac & cheese using the recipe posted in another thread!!
It was very good.. i made the recipe, with a box of whole wheat pasta.. next time i will make sure to have broccoli to serve with it too.

you are right it is fun to see what everyone is eating!

Breakfast: Oatmeal w/ Brown sugar & Banana
Snack: Almonds
Lunch: Quron meatless baked chicken nuggets, plain baked potato w/ Veggie cheese (cheese made from Veggies...delicious!) & steamed broccoli
Dinner: Spinach salad w/ whole wheat croutons & Balsamic vinaigrette dressing, and 1 cup Pinto beans
Snack: I haven't decide yet. Very Happy

snack: banana
Lunch: veggie sandwich on pita w/hummus, Wegmans vegan potstickers
snack: soy yogurt w/bluberries
Dinner: curried lentil soup with side of couscous salad

Breakfast for me was T Joes multi-grain hot cereal with fruit and a splash of orange juice. black coffee

Lunch was split pea soup with a whole grain roll

Snack was a small green salad with vinagrette (sp?)

Dinner will AGAIN be the spaghetti squash with tom. eggplant red pepper, garlic sauce-which I am getting tired of-plan to finish it off tonight!

Pam, do you have the recipe for spaghetti squash with tom. eggplant red pepper, garlic sauce? It sounds great.

Breakfast: oatmeal with frozen blueberries
Snacks: dry grape nut flakes, applesauce cups, raisins
Lunch: leftover quinoa/diced tomatoes/black beans
Dinner:steamed broccoli with nutritional yeast flakes mixed in for a great taste; Hummus 2 on whole wheat sandwich thins
Dessert: orange, banana

The girl at the grocery store showed me that tahini is near the pickles, went home and made the Hummus 2 recipe- first time I made hummus in my life and its delicious! How exciting. I froze bananas because someone wrote that you can freeze them and have one whenever you wish.

cch22: Thanks for the tip on organic blueberries and dark chocolate cocoa powder...great ideas..I'll look for them again at another store that might have them.

started off great! did oatmeaal..rather than apple cin, i threw in soe frozen fruit. was really yummy! however, i noticed realy quickly that i wasnt drinking enough water in the morning and i was feeling hungry quite a bit before lunch. however i waited it out, and enjoyed my hummus and veg sandwhich...but of course we were short staffed over lunch hour...which is our busiest time of day, so it took me about an hour to actually EAT my sandwhich. I also had about half a cup or so of my leftover carrot&pepper soup which was in the fridge at work and looked like it needed to be eaten. Smile had my soy yogurt for a snack.
I ended up having to work overtime, so i was worried about not having enough time to get my soup (curried lentil with couscous) together...but my wonderful husband (who has not been working all week and is quite bored!) called to ask ``how do i make your damn soup!`? LOL and low and behold..i come home (STARVING!) with my soup all ready to eat! and let me tell you..it was GOOD!! enjoyed it with a salad and now i am sitting here drinking my warm lemon water...my fav way to end the day Very Happy
