OMG! Fire Engine Wrap was awesome!
Posted Thursday, April 14, 2011 at 8:48 PM
Just got through eating two of them. I warmed them in a 450 oven for 10 mins. Then I topped them with salsa and avocado. I hate to say it but it's the best thing I ate since starting the kickstart! You all should try them it's in todays video.

I especially like how much mess she made in the kitchen when she made them... reminded me of AN UNLIKELY VEGAN shoot we did recently! So I gather they soften up from the oven part, and you eat them with a knife and fork?

Oops, sorry Jill, you didn't make a mess at all today... I was remembering the ginger pepper salad from the other day! And I was really only teasing because I chuckled when I watched the video and saw the huge amount of salad! It reminded me of our experience with the couscous confitti salad!

Yes I used a fork but didn't need a knife. They were great!

Yum - that's one of my favorite meals. In fact, we're having those wraps for dinner tonight. Glad you liked it, too!

We do something similar by taking a burrito wrap, put on hummus, maybe a slice of tempah or two, definately fresh spinach (it wilts so quick)& tomatoes.. maybe sprouts.. then wrap it up and fry it covered..(no oil- a good non-stick pan on med heat) everything heats up and tastes yummy.. have tried that with rye bread too..(buttered the bread Lightly w/earth balance..)

I love the E2 burrito. Putting it in the oven is just the ticket to elevate it from a normal wrap. And there are so many variations. Limited only by the contents of your fridge and cupboard.
