So far, I have a very happy husband

Unlike a lot of the posters here, my husband has been a vegetarian for almost 20 years, so he is very supportive and all for this way of eating. He thanked me last night for all my hard work getting the meals together, and he even bragged to one of his co-workers yesterday about the lunch he brought and had her taste it. It's nice to be appreciated. Wink

That's great! Fortunately, my hubby is also on board - especially since he's the head chef here at home. It'd be much harder if he wasn't willing to cook vegan meals. As it is, he really likes it and enjoys experimenting with new foods, new recipes, new combinations.

I love to cook, so my husband rarely does it. I get frustrated at times because I don't have time to cook, what with my commute and working full time. But it does help me to decompress at the end of the day to fix dinner.

Back in the long ago, hubby had a huge commute and mine was almost around the corner close - he averaged an hour each way in good weather, mine was more like 10-15 minutes. So, we'd decide dinner the night before or over breakfast and I'd set up his "mise en place" to use a chef-word. I'd do the dicing and slicing and check the recipe for ingredients (if we were using a recipe). I'd have everything measured, diced, sliced, portioned and arranged by the time he got home. All it required was the cooking. This was really great for doing fresh quick stir fries and such particularly.
