Vegan Soups

Here's a vegan soup that I'm fixing for our "rainy day" dinner tonight. (Non-vegan friendly)

Tuscan White Bean Soup

1 28 oz. can of Italian Style Tomatoes (drain and reserve liquid; chop coursely)
2 leeks or 1/2 cup chopped onion
1 Tbsp. olive oil (optional)
8 oz. pkg. of fresh mushrooms (washed and sliced)
1 large yellow or red bell pepper (or combo of both
cut into bite-size chunks)
8 oz. pkg. of fresh spinach leaves
3-4 cloves of fresh garlic
1 18-19 oz. can of Cannelloni or White kidney beans
(drained and rinsed)
32oz carton of Vegetable Broth (I use Trader Joe's organic vegetable broth by Imagine)
1/2 tsp of salt
1/4 tsp of pepper

Cook leeks/onions in oil (or water) until tender. Add sliced mushrooms, bell pepper & garlic. Cook 5 minutes more. Add broth, tomatoes and liquid and drained beans, salt & pepper.

Simmer uncovered for 5 minutes; Stir in spinach- Cook until spinach is done to your taste; about 15 - 20 minutes. Makes 4-6 servings.

*** Note: You can add another can if you like a little more beans, but may need to add more broth or water

Serve with some hot crusty bread.

Vegan Potato Broccoli Soup (Non-Vegan Friendly)

5-6 medium potatoes(peeled and chopped into bite size pieces)
2 cups fresh broccoli florets (bite size)
1/2 cup chopped onion
2 stalks of celery
1 1/2 - 2 Tablespoons of Bill's Best Chick'Nish Seasoning (or something similiar like McKay's or any other vegan chicken flavored seasoning)

Put potatoes, onion, celery & Chicken seasoning in a large pot and cover with water about 1/2 inch above potatoes. Cook until fork tender, but not mushy.

I steam the broccoli florets separately, leaving them a little crisp. Rinse in cold water to stop cooking and retain green color.

Take out about 2 cups of the potatoes with a slotted spoon and set aside.

Take the rest of the cooked potatoes with liquid and put in a blender, food processor or Vita-Mix and blend until smooth. Pour back into pan bring to a simmer adding more water to desired thickness. Add the cooked potatoes and broccoli; gently stir, heat for a few minutes and serve. Salt and pepper to taste.

**We had this last night and my non-vegan husband loved it. He didn't miss the dairy at all. I tried another potato soup recently with some soy milk and he didn't like it as well as this one.

Vegan Split Pea Soup (Non-Vegan Friendly)

1/2 bag of split peas (rinsed)
1/2 medium onion chopped
1 clove fresh garlic minced
1 medium potato chopped into cubes
1 carrot chopped into small pieces
1 celery stalk
1 1/2 teaspoons of Bakkon Seasoning/ Hickory Smoke Style (can find in Health Food Store)
1 tsp. herb seasoning
1 tsp. parsley flakes
1 Bay leaf
Sea Salt to taste after the soup is fully cooked

Saute onion and garlic with a small amount of water. Add carrots, celery, potato and stir. Add rinsed split peas and then water to cover to about 1 inch above peas. Add Bakkon Seasoning and stir. Bring to a boil and simmer about 1 hr. Add water as needed to thin. Discard bay leaf before serving. Makes 3-4 servings.

*** If using the whole one-pound bag of split peas, just double the rest of the ingredients.

(Didn't miss the ham at all!)

As you can see I've been on a soup kick. Good thing my non-vegan husband loves soup. I'm keeping track of the ones he really likes.

Vegan Corn Chowder (Non-Vegan Friendly)

2-3 Medium Potatoes (peeled & chopped into bite size pieces)
1/2 to 3/4 cup chopped onion
1/2 tsp. onion powder
1 Tablespoon of Bill's Best Chick'Nish Seasoning (McKay's or similar)
2-3 stalks of celery chopped
2/3 cup of whole kernal corn (frozen, or canned)
Will need another 1 1/3 cups of corn to add later.

In a soup pot; cook potatoes, onion, onion powder, celery and corn until potatoes in water ( fill water to about 1/2 inch above potatoes in the pan). Potatoes should be fork tender but not too mushy. With a slotted spoon take out about 1 cup of the cooked potatoes and put aside.

Take the soup mixture and put into a blender, food processor, or Vita-Mix. Blend until smooth and pour back into soup pot. Bring to a simmer, add water to desired thickness and add corn. Cook about 5 more minutes and serve. Salt and pepper to taste.

*** Note: All I had on hand was a few cans of Mexican Corn and it worked fine, even gave a little more flavor. Picked up a package of frozen "Roasted Corn" at Trader Joe's the other day. Going to try that out next time, will give a little different flavor.

No you don't have to use mushrooms. We actually had this soup last night. I just happen to love mushrooms, especially the crimini mushrooms. You could substitute some zucchini,green beans,cut up butternut squash, or some eggplant. You could even add some barley or pasta.....would be like a minestrone soup.

Play around with it and just add the things you do like.
