What R U eating Fri April 15?

Hi All, So the weekend is finally here!! yippee.. b-normal cereal, banana, coffee, unsweetened organic silk soymilk l-left over dinner d-some frozen chili.. might as well use it up.. need a quick one today because we are meeting friends tonight. so tonight i gotta soak the beans for cooking this weekend.. i have a lot to make.. honey is out of patties.. a real crisis... then he is almost out of cookies..and i might as well make us a soup. Looks like i will be spending some time in the kitchen.

I have a rare day off work today. Hooray! I plan to take a load of items to Goodwill, get my hair cut, stop at Trader Joe's, and do some clothes shopping. Funny, I need a smaller size.  B: Pip's Big Bowl (just like Rip's big bowl from E2) with 4 kinds of cereal, lite almond milk, banana and pineapple. L: I may be meeting a friend at a Mongolian BBQ place. I will have a big bowl of veggies and some tofu with an oil free sauce (they have several). Maybe a bit of rice or a tortilla. Alternative: leftovers from last night (curried spinach and chickpeas over couscous). D: Dunno yet. Possibly those leftovers if I do go out for lunch. Otherwise, probably a baked potato topped with steamed veggies.

pippin that is great!! a new size.. feels good huh? and thanks for the reminder.. don't always have to do the full standard meal.. baked potato and vegg.. just what i might need next week before zumba class.. not too heavy but filling & quick. do you bake a bunch of them and then just throw one in the microwave when you need something quick?

my normal smoothie of one cup Eden soy unsweetened soy milk, 1/3 cup gemma pea protein powder, 1 cup mixed fruit salad with a big hand full of spinach. half of a cherry pie Larabar, and a banana for a snack. a big old farmhouse salad, with home cooked black beans for lunch. an orange for a snack. not sure about dinner yet. wish it would warm up here in Seattle. rode my bicycle to work, it's only 45F or 7C here.

B- leftover vegan Sheppard's pie ...Thanks for the recipe Deb! It was yummy! s- grapes L- brown rice topped with vegan burger & mustard. s- smoothie D- Quinoa mixed with squash, asparagus spears, cucumber & tomato salad.

Hey CCH. Yes, sometimes I do bake a bunch of taters and keep them in the fridge to heat up later. But usually I have time to nuke a large russet potato for 3 - 4 minutes and then finish it off in the toaster oven for a crispy skin. It takes about 45 - 60 minutes, but by the time I've change out of my work clothes, and walked and fed the dogs, it's done.  I did go to the Mongolian BBQ for lunch. I loaded up on fresh veggies and a bit of tofu with a hot hot schezuan sauce. Yum! I even went back for seconds. But hey, why not!

So this morning I had toast (pumpernickle Bread) w/little bit of strawberry jam. For Snack a fruit smoothie (berry medley, orange, and a squeeze of agave sweetner). Lunch some lentil soup w/spinach, cilantro, tomatoes, onions, celery, garlic, carrots, and celery. Love it! Then for dinner not sure but I bought some tempeh so I will be experimenting with this since it's the 1st time to try it. And definitely a salad to go with that.

Kind of a strange day foodwise... B - Tried vegan waffles for the first time... wow, were they horrible! It's very rare for me to just throw away food, but I honestly couldn't eat them. I ended up having 2 slices of toast with strawberry jam instead. L - used up my very last egg in a scrambled egg and salsa burrito of sorts, it'll be tofu scramble from here on out! D - sweet and sour "meat"balls with brown rice and asparagus S - Probably either an orange or an apple

b-steel cut oats with flax and agave. s-banana, nuts l- big salad s-red banana (my first one! It was good) d-Amy's vegan pizza with salad s- thinking about a smoothie. I have at least one a day

Let's see, today's food: b- Van's lite waffle (no syrup) and a samosa with cilantro sauce. Guess I needed some carbs . l- Whole wheat spaghetti with marinara and steamed veggies. Some peanuts in the shell (I eat less of them if I have to crack them open). d- Big salad with spinach and baby romaine, tomatoes, carrots, broccoli, sunflower seeds, and Goddess dressing (Annie's Goddess dressing is so good, but I noticed the fat content is pretty high.) If anyone knows a lower fat tahini-type dressing, please share!

Did something different for dinner.. we found out Moe's has tofu! so hubby had a homewrecker tofu burrito with all the veggies they have. He said it was the best burrito he has had from moe's. i had a tofu bowl w/lots of veggies.. (no salad dressing) it was very good.. but we are really happy to find a quick resturant that we can go to and get healthy food.

greenish, I make my own waffles using this recipe http://www.nutritionmd.org/recipes/view.html?recipe_id=672 I use ww pastry flour, omit the oil, and use brown rice syrup for the maple syrup. I have made them without any sweetener because I use soymilk that is sweetened with barley malt already. Sometimes I sub some pureed squash/pumpkin for milk. Good way to sneak in veggies. They keep for a few days in the fridge, and freeze well.

ut oh.. i visited the moes website.. it wasn't as healthy as i thought. It CAN be healthy with different choices. For instance forget anything grilled. Our grilled green peppers and theirs are two completely different items. their grilled green peppers are 1/2 fat!! BUT using the fun little nutrition thingy at the website is easy and i will be more informed next time.. corn pico, pico,lettuce, black olives, rice, red beans for me.. their red beans have sig less calories.. huh? http://www.moes.com/Food.php?ii=1
