Posted Thursday, January 6, 2011 at 7:29 AM
Hi All, here we are on our own little reality show.. how is your week going so far? I am doing it! Today is the day i am making my very first green smoothie.. wish me luck.. i am thinking spinach, banana, & blackberries.. with water too. then once again.. need to eat up leftovers.. only because last night at the last minute i made the mac and no cheese.. it was good.. and gone. i saw 2 food channel shows last night w/mac & cheese.. (one was veg edge) they both put in dijon mustard. i might have to try that sometime.. something to keep in the back of my mind.. snacks are those little packaged endamane.. and an orange. I did good last night.. no snacking at all... feeling hungry this am..

B: Cereal, plant milk, chocolate bits. I'm not all awake in the morning so I tend to eat the same things most mornings (yesterday was an anomaly with having oatmeal because hubby was up and I work from home on Wednesday so I had time to wait for the oats to cook). L: don't know, have a lunch meeting for work at a restaurant. I noticed that today's menu indicates vegan soup and whole grain bread so I might be able to find that on the menu (lots of soups this time of year in New England) - I hope so. If not, looks like a big salad or something. Maybe a veggie grinder (hoagie, sub, hero to translate for different regions LOL) - several places in the area make nice roasted veggie sandwiches (roasted peppers, onions, mushrooms, zucchini, etc) D: chili (the rice and broccoli with not-cheese sauce last night was awesome! We each had two servings!) S: apple, banana

reporting back on the smoothie.. well.. Remembering comments from others, the smoothies are best really cold, i put the banana in the freezer.. i really should have peeled it first... i did manage to peel it with a knife.. i put it all in the blender..banana, berries, spinach, ground flax seed & lots of water... it is green..and cold.. i can taste all the flavors.. i would say a success.. but i put in too much water.. I would try another...

My usual breakfast (or deskfast as I normally eat it at work!) is oatmeal/walnuts/cinnamon/berries/apples but today I'm breaking the mould and will have 1/2 a pita smeared with all-natural salt-free peanut butter, banana slices and topped with a cranberry/orange/raisin melange I cooked up the other night. (I've been putting it in my oatmeal too and it's awesome) Lunch: leftover veggie stirfry with Lima beans and a small couscous confetti salad. Grapes Snack: apple (either mid afternoon or this evening) Dinner: a vegan chili bubbling in the crockpot Make it a veganificent day everyone!

I have been doing green smoothies for a few years now- i put in anything and everything (like dandelion and purslane, kale whatever is in season- sadly none now. I personally don't like my smoothies too cold or too sweat anymore- I focus more on berries or pears. But that has developed over time. I even get my omnivore husband to faithfully drink his- had to make them with milder greens ans sweeter for him at first also. I eat a lot of raw food-good thing to try to do at least half the time. So my menu- This morning's green smoothie was pear, blackberries, spinach and mixed salad greens. Tomorrow will have some sprouts ready again! Had to shovel this morning so I already went for breakfast part 2- buckwheat waffle with almond butter and blueberry syrup. Lunch is Pacific brand cashew, carrot ginger soup with raw flax crackers- I know how to make them but I cheated and bought these. Snack will prob be apple and nut butter or nuts and dried fruit dinner- made a delicious bean and veg stew the other night- a new recipe I am trying on my omnivore daughter- the husband loved it the other night when my daughter was gone. More cracker for me, whole wheat bread for her (I have celiac).

Chili is vegan and then hubby and son can choose to add cheddar or sour cream if they want. I think hubby may also be making whole wheat tortillas today as well (they're wonderful topped with hummus and veggies for a wrap) --Deb R

oh my gosh all this talk of green smoothies is about to make me detour from my planned day!i am TRYING to stick to the 21 day plan. so today will start with my cereal and almond milk..and i will have grapefruit as well. i know today will be a challenge simply because i DONT work! which i love..(especially after an 11hr day yesterday!) but that means alot more time just hanging around ..and i am what you would call ``a nibbler``. I will have to do my best to keep busy. i do have some errands to run so that helps. Any suggestions to keep busy? its looking cold and windy out...so indoor activities are neccessary!

I love green smoothies too. I don't have them often in the winter, but In the summer I have several per week. They are especially good with fresh greens. CCH, I learned about frozen bananas the hard way too. Getting those frozen skins off is a pain! So, today. I had leftover veggie and rice stew for breakfast. Non-traditional probably, but tasty and filling. For lunch I am meeting a friend at a Mongolian grill. I have researched so I know which sauces are vegetarian and low fat. A surprising number of sauces use fish sauce. I plan on lots of veggies and some tofu, grilled without oil. They only have white rice, but on occasion I am okay with that and will allow myself a small portion. I am not sure about dinner yet. Maybe I will go south of the border and make easy bean burritos or quesadillas, with fat free refried beans and lots of salad fixings, salsa, and some corn relish.

Knit, sew, clean a closet, scrub a floor. I'm also a nibbler if I've got no plans for the day, so I make sure that I have LOTS of good stuff on hand - whole grain crackers, hummus, fruit, veggies - that I can just grab as I'm meandering around the house. And then I just nibble instead of having full meals (usually it'll be cereal for breakfast, nibble until dinner and then have a small-ish dinner).

Fairy- I thought of another I have been doing successfully- if you like tea, preferably green or herbal. Have a planned treat after staying away from the munchies. I am always tired and think I am hungry just a little while before dinner time. Someday I may move up dinner time when my teen is gone but for now, I treat myself to some computer time and a cup of tea. In the summer this is not such an issue, but I need the pick me up in the winter!

In the summer this is not such an issue, but I need the pick me up in the winter! I drink Bengal Spice tea year round - I'll brew it then ice it in the summer, hot in cooler weather. It's got enough kick to it to taste like a snack (Celestial Seasonings brand, contains cinnamon, ginger, cardamom, cloves, nutmeg, black pepper, vanilla, roasted chicory and carob). If it has flavor I'm more likely to drink it than if it's plain water (though plain water tastes good when it's an alternate taste to the spices)--Deb R

Purslane should be in your garden for free! Look it up- I bought it first at the farm market, got it home to put into my salad and realized that I am growing this stuff everywhere. Another good one is lamb's quarters. They are both very invasive if you leave a bed cleared like I did last year! Red Russian kale loves cold weather and is also invasive if you let too much go to seed and lancinato is wonderful for making baked kale crisps- yum- I want summer! Kale is good with boiled potatoes too. In soups, etc.

we're just venturing into the 'exotic' greenery now too. We've fallen in love with rainbow chard - the stems cook up like colorful celery and the greens are lovely just lightly wilted. We had a rainbow chard quiche over the weekend - it's a riff on the Veganomicon asparagus quiche recipe. Instead of eggs, it has navy beans. We whirred the diced stems with the beans and other ingredients, lightly wilted the chopped greens and just folded them in. Even our 12 yr old came back for seconds! Kale is another one that's rapidly becoming a staple. Haven't quite gotten to dandelion greens or collards yet. Might try beet greens, I like it when we can use the whole thing from tip to stem. --Deb R

i won't have any problem venturing into chard. I love chard.. and the colored ones are just that.. colorful and delicious. speaking of wilting veggies. .. i found a website with probably the easiest recipe ever.. just boil water, add pasta, b4 pasta is done put in cooked or canned beans, drain.. stir in greens to wilt.. add spices.. Done. http://kblog.lunchboxbunch.com/2010/10/dont-skip-lunch-vegan-power-lunch-pasta.html

Somehow (and trust me I usually pack in the sweets) I have had no cravings for sweets. I do love a snack after dinner and before bed (I know it's not the best idea), but I've been having bean dip with veges and baked chips or popcorn. Here's todays meals: B: Oatmeal, coffee with soy milk L: Leftover lentil soup (That was delicious) S: tortilla w/hummus and orange D: Bean Burritos with "cheese" sauce (another excellent recipe) S: Chips w/FF bean dip? Let's see if I lose weight after all this food!
