What R U eating Sat April 16th?

HI All,
Today will be a shop and cook day.. I have the black beans soaking for patties. I think one batch will have spinach & onion... then add some green pepper & bake a few more... then add some corn and bake a few more..that way it looks like i have some variety.

b-same cereal, i am still full from dinner.. we ate late..we helped friends out w/our truck right about dinner time which pushed dinner out 2hours.
l-??? probably something after shopping
d-chili.. we were going to eat that last night, but wound up eating at moes.

I was thinking later.. I thought i ate goood at moes, but i wonder.. tofu bowl.. w/tofu, mushrooms, green peppers and all the uncooked veggies...oh and my splurge guacamole. I used the guac like a salad dressing.

I am thinking the tofu, mushrooms & green pepper were probably all fried. Crying or Very sad perhaps next time forget the mushrooms and fried green peppers.. there is enough of the other.

any thoughts?

I think it is always a good idea to avoid the fried stuff. Usually, I feel rotten after eating such things. I am not familiar with Moes so I don't have any idea what good choices are there. I will say that when I go to Chipotle (which might be sort of similar?) I get a salad bowl, avoid the fajita veggies because of the oil, but I fill up with fresh salsa and corn salsa, black beans. I overindulge on the guacamole too. I too use it like salad dressing. Something to work on.

So, for me today
B: Pip's Big Bowl with lite almond milk, pineapple, banana (same as yesterday)
L: Steamed red potatoes with mixed veggies.
S: Popcorn (air popped). Might go to the pub with a friend and have a beer or Bloody Mary.
D: Black beans and rice fromE2 cookbook. Topped with tomatoes, cilantro, avocado, water chestnuts, chopped lettuce. Actually, inhave leftover couscous, so I may use that instead of rice.

hi pippin..
i had to decide between chipolte & moes.. they are across the street from each other.. i decided moes because they have tofu!

they have a nutrition counter.. it is fun and easy.. and produces surprising results.. next time will be different.

It's really a rainy, nasty day and I don't have to go anywhere, so I decided to pack away my winter clothes and pull out summer. As I went along I started trying on some things. Found a pair of size 18 jeans I used to wear -- you could fit 1 1/2 of me in there. My daughter and i were laughing -- it looks like a commerical! She asked me if I wore them when I was pregnant! (No, just looked that way Very Happy)

B: Oatmeal
L: black bean burger w/ salsa & leftover hoppin john salad
D: Pizza w/ veggies
S: popcorn

B - oatmeal, small glass of orange juice
S -Odwalla protein bar, probably not vegan but I was hiking for 3 hours, and that's what I had
L - sproutofu veggie burger and slice of rice cheese on whole wheat English muffin with lettuce, tomato, etc.
S - soy yogurt with blueberries
D - not sure yet, maybe a big salad?

B: Guyaki Tea & Rice Cream (not the ice cream sub, but cream from long cooked rice)

L: Quinoa & Chickpea salad w/ a balsamic vinegrette. (salad & dressing from 'Appetite for Reduction'.

D: this is still totally up in the air!

Breakfast Fruited Quinoa
Spinach Mango Bannana Smoothie
Whole Wheat tortilla with hummus
Engine2 Enchilada with Mexican Corn Salad

Oh and homemade vegan cupcakes. Recipe I got off of delectableplanet.com

Didn't care much for the quinoa I thought I would I like quinoa. Cupcakes hit the spot. I haven't ate the enchiladas they smell good hope they taste good.

Just thought I would let you all know in case you're going to try the Enchiladas from Engine2/Rip Esselstyn it's spicy hot to hot for me. I'm so disappointed cause now I'm going to have to throw the whole pan away. That's a lot of money and time wasted. I even cut back on the chili powder only put in half of what it said. On the bright side the Mexican Corn Salad was great!

Cynthia, fun calculator - shows what a difference it makes to take away the animal products, the calories and fat take a nosedive.

Dinner tonight was baked tofu, crepes, brown rice, and a stir fry, plus Vegan with a vengence stroganoff (just in case hubby didn't like stir fry). Everyone could mix and match as they wanted - one daughter doesn't like crepes or tofu, while the other two are absolutely crazy about them! As I was working in the kitchen for a long time (I did other cooking projects too), hubby says, "what are you making? Or I should say, what are you making that nobody will eat?" So even though he really likes the stroganoff (he once said he couldn't imagine anyone not liking it), he made his own dinner of lettuce with a can of tuna on it.

So, any recipe suggestions that a dedicated meat-eating fast-food lovers would eat? He thinks eggplant is poison, and doesn't like zucchini, peppers, winter squash, or sweet potatoes.

At lunch, my 5yo was eating tempeh "tuna" salad. Hubby said she could have real tuna, and she thought that was really icky. He asked my 5 and 7 yos why they thought meat was bad. The 7 yo said that answering was a job for mom; the 5yo said that "meat clogs up your blood holes."

I think people just don't like the idea of it all. My husband says he won't give up the meat. I went gentle, I started with vegetarian chili. He love chili and didn't miss the meat in it. He still eats his eggs and goes to BK when I'm not around, but he also tries new things (I was surprised when he put a side of the hoppin john salad on his plate the other day to try) Another good one is the spinach lasagne recipe from nutritionmd.org everyone loves it - I'm making it for easter

@cathy.. sounds like you have found a couple recipes your family will eat. That is good. I guess one way to help is to make Soup (that is a whole meal in itself) Who doesn't like soup? Do a white bean w/veggies everyone likes.. throw in some barley & diced tomatoes and there you go.

Also how about hearty chili mac? it's almost like that hamburger helper, but so much better for you. kids tend to like macaroni. Whole wheat mac, diced tomatoes, & veggies.

Wait till they see how good you look, how much engergy you have, how much you enjoy the food, your better doc visits (blood work & maybe weight), how dedicated you are.

Does your husband support you in front of the kids? Has he seen any of he peta videos? Has he done any research on his own?

@cathyb.. sorry i forgot about a prior conversation where you explained your daughter is vegetarian and your husband was eating mostly vegan. Embarassed

Thanks for the ideas. I think I will try a different chili recipe, and also try serving a choice of two soups and cheese sandwiches to go with. Soup was always such a quick meal cuz I would have some in the freezer. I made the chili mac, and he ate it and said it was ok. There were no leftovers, so that is a good sign. I think I will try it again this week, or something similar.


My doctor visits won't be better until I stop the nighttime snacking! I need to break old habits. I did it once, so I know I can do it again. I lost 15 lbs in two months then, which actually wasn't too good - went from 110 to 95! I have a blood sugar issue, not weight.
