Birthday cake
Posted Monday, March 15, 2010 at 7:09 AM

I'm planning on making a pirate ship birthday cake for my son's 5th birthday and, while I've found lots of different vegan cake recipes, I'm trying to find one that's sturdy enough to make into a shape like a ship and won't fall apart on me when I decorate it. Laughing Does anyone have a tried-and-true recipe that would suit this purpose? No food allergies, so just needs to be vegan and sturdy.

Thanks! Smile

Try this ahead of time. But I take oatmeal and grind it into a flour. I add whatever I'm in the mood for. But usually always banana and figs because it make the cake sweet. Then I add applesauce and fruit juice to make it the consistency of cake batter only a little thicker.
I add a teaspon of baking soda and 2 teas of baking powder and 2 teas of almond extract or vanilla
I bake about 40 to 50 minutes at 350.

I cut into squares when slightly cool. My kids love it. I serve it to them for breakfast and call it breakfast cake. (They get it with cream cheese frosting sometimes)

Anyways, I think you could shape it into what you want. kc

Thanks! I'll keep that recipe in mind for snacks for the kids. Smile I actually decided to go with a recipe my friend gave me that's for kids with egg/milk/peanut allergies, since her son has all of those allergies and she's made it a bunch of times. She swears it's the same consistency as a traditional type of cake, too. Smile

Thanks again for the oatmeal cake recipe - it looks yummy, too!

That cake sounds great. Could you pass on the recipe. I've got 2 kids - one who loves cake. kc

Here it is, exactly as she typed it out for me:

Wacky Cake
3 cups all purpose flour
2 cups sugar
1 tsp salt
1/2 cup cocoa powder
2 tsp baking soda
2 tsp vanilla extract
2 tablespoons distilled white vinegar
2/3 cup vegetable oil
2 cups water

Preheat oven to 350 degrees. Mix all dry ingredients and add vanilla, vinegar, oil and water. Blend with hand mixer really wall for a long time, getting rid of all lumps.

Pour into greased and floured 9 X 13 inch pan and bake 25-30 minutes, until cake tester inserted near middle comes out clean. Or, can make cupcakes. They freeze really well and defrost quickly.

***I know this has a lot of sugar and oil in it, but I figure it's a special occasion cake, not necessarily an every day cake, though with a few modifications, it would probably taste pretty good and be a bit healthier. Laughing

Thanks so much for the wacky cake recipe.

Last night I made my oatmeal cake again only I moistened it with almond milk. My gosh, It came out kind of moist and goey in the middle. I think I'll put in some cocoa powder next time for a brownie effect.

You're welcome! I'm going to make the wacky cake tomorrow for my son's party on Saturday, so I'll try to remember to let you know if it's good or not. I think it must be, though, because my friend said she's made it a bunch of times and they all like it.

I made the wacky cake tonight and tried a small piece of it and it's really good! Super moist (of course, it has a lot of oil in it LOL) and yummy! It looks and tastes like a regular, mainstream-type cake to me. Personally, I could eat it without frosting, though I've never been a huge frosting fan... Very Happy
