I'm in that same boat. I feel much better. I haven't had a problem with the Vegan part but I think I have to focus on the fat intake.

I'm still here! I set my "Email all new posts" option to "yes" so that anytime someone posts a new thread, I'll automatically know about it. The communication will drop off, but it's nice to know we're all still here in spirit!

The fat intake is what gets me, even a tiny bit and I don't lose. Good luck and a few of us will be around if you need to chat!

I'm still here and continueing on the program! i don't weigh myself.. but i feel great... lots of energy.. and i like the food.. i am going thru books and looking for yummy things to eat.. I might try the Raise the Roof Sweet Potato Lasagna on page 202 of Engine 2 diet for sunday's dinner. there is a vegetarian festival in my area on Sat i am planning on going to.. speakers include Kelly Serbonvich, George Eisman, Steve Meyerowitz, and Caldwel Esselstyn Jr... all is free.. vendors, speakers.. etc...

Wow! Have fun!!!!! I would love to go to something like that. I need to find things to cook this weekend for the next week, I may check out the lasagne recipe you mentioned because the GF noodles aren't too bad at all and lasagne sounds wonderful! I did weigh in and gained 1.5 of the 3 lost right back. I don't have to worry too much about staying meat and dairy free as it is already a way of life for me. Still hovering!

I wish there were festivals like that where I live! I'm so envious. But not so for Cowtown. Too much red meat here to ever support such a thing. People barely know what a vegetarian is, and if they know, they ridicule it. It's important for me to remember that though recipes like that are delicious, if eaten too frequently they can lead to weight gain. Just because something is vegan doesn't mean it's healthy. For myself, if I eat pasta of any kind, or too much heavy food – even in small amounts – I will gain weight for sure. I have to keep my meals light... salads with just fresh, raw vegetables and very light dressing, lots of fresh, raw veg for snacking, some fruits, some whole grains here and there in measured portions, legumes with nothing added... it may sound boring, but it's enough for me. And most importantly, it's healthy, nutritious, and keeps my weight stable. I've learned over time that my body cannot handle heavier foods like rice, casseroles, pasta dishes, stir fries, etc. It's one of the reasons I eat so much raw food – the more raw, high-fiber, fresh vegetables I eat, the more my weight stays stable and I stay slim... and I have energy, too!

I have made the lasagna and loved it. My family didn't care for it though. It is so loaded with good veggies! I like a lot of recipes from the Engine 2 diet book. The E2 basic salad dressing is now a staple. Molly, I live in a cow state, but it is the dairy state. Cheese is everywhere, there are even stores devoted to cheese. Meat is also very big here too.

I live in a cow town too  Houston has a fair number of vegetarians just because the oil & tech companies bring in a lot of international types, and since I work in that kind of industry I don't have to feel like a total loner, but going to dinner with family in the redneck suburbs - Ugh!

http://www.dfwnetmall.com/veg/ this page looked pretty impressive to me .. i would think there is a lot of support in texas!! i love texas.. my sister lives close to austin.. if my husband and i had not worked our way up to great jobs we would both be there in a heartbeat.

Caution: Do not expect Texas to be like Austin! Seriously though, once you get outside of hipster, kosher & indian neighborhoods things get more challenging for Texas vegans. Things are slowly changing though, especially in the cities, because so many people migrate here.

That's what the city is called; our nickname. All the cattle drives of the "old west" came through Fort Worth because the railroad hubs all came through here, so FW was the meeting place for all ranchers. It is literally "where the West begins."

Even here in Southeast Pennsylvania it's very challenging. My background is Pennsylvania German and they love their meat! We have several meat packing facilities within a couple of miles of my home. Just try to find a vegetarian meal around my house ... it's slim pickings indeed unless we go to an ethnic place. Even the town where I work is difficult, although they think they are so hip and up to the minute. I have to either go to Philly (not a bad thing to do, since my sons live in center city) or drive 40 minutes to New Hope PA, which has a fabulous new vegan restaurant.

I don't have a vegan restaurant close-by but it's worth the drive to go to Lakeland or Orlando. My closest Whole Foods is about 35 miles.

Ouch, Vikki. The closest place to me for any type of good organic and/or fresh, natural produce is ... downstairs! I work at a specialty foods grocer. Lucky me!  (Though it makes it VERY hard when the holidays come and all the tasty desserts are filling the aisles.)

I'm really feeling pretty fortunate to live in Southern Oregon. Nearly every restaurant here has a veggie section on the menu. Not always low fat but they will always hold the cheese, sour cream, etc. to make it vegan. I think they are really getting the message that there are a lot of us vegans. The other day the waitress even volunteerily said the cook would steam hash browns if I wanted them instead of my usual dry WW toast. Some other vegan must have been there before me! Breakfast is definitely the hardest!  Linda
