PASTA I MADE LAST NIGHT

I needed to whip up something easy for the family, here's what I came up with.

Pan with a little water, throw in garlic for about 30 seconds, add whole cherry tomatos and cook them a little till they start popping, breaking down. Added a jar of artichoke hearts in water. keep cooking till the tomatos cook down to kind of mushy. I adeed some basil and oregano and thyme. Added more H20 if needed to keep it a little thick but not overly soupy. Added in a can of rinsed great northern beans.

Cooked whole wheat pasta and saved a little of the pasta water. Put the pasta in with the tomato mixture, added some H20 if too dry and cut up some fresh basil, S&Pepper to taste. Voila!! Dinner!!! It was wonderful. That's my breakfast this morning.

Similar will work with all sorts of mix n match stuff. We've done black beans and summer squash; chickpeas and zucchini; and so on (plus the garlic, herbs, tomato). Sometimes we'll even toss the pasta with black beans and fresh salsa for an interesting twist instead of using rice. "Cincinnatti chili" is pasta with chili over top (typically meaty plus cheese); we'll use hubby's veg chili instead.

Thanks Deb for more great ideas. Brilliant! I will try them. I have been making the black beans/diced tomatoes/onion/red bell pepper/corn....chili. Its so easy and it tastes delicious. I need other ideas for variety so thanks for the additional ones.

That sounds good, Kathy. I made the Buckwheat Pasta with Seitan tonight from Week 3 and it was delicious!!
