What R U Eating Mon April 18?

Hi All, b-cereal l-soup d-anything leftover and quick-going to zumba. Gotta love mom. She wanted to make us a vegan meal. She called up and I changed recipes on her. Then she had none of the ingredients except coconut milk. So she wound up coming to our house last night for the vegan meal. So this is the 2nd weekend in a row she has chosen to eat vegan. Also she is going to make that orginal recipe for us on Friay at her house. It is some sort of lentil curry recipe. I just hope it is not mush. Today is a normal day off. I am a little late posting this because i updated a very old blog so i can share pictures of food with you all. Check it out and tell me how it looks... please... B: usual cereal and plant milk L: leftover rice and beans and a tossed salad D: veggie fajitas (onion, bell pepper, zucchini, yellow squash, mashed avocado on homemade whole wheat tortillas) S: apple, banana, grapes Trying to get back on track after a 4 day weekend - managed to stick to vegetarian at least while traveling, and vegan whenever I could. Need to get back to what I know to do right (cut out the sweets and dairy, get back on the treadmill, lots of fresh fruits and veggies). --Deb R

Oh my. I think this topic has gone off the rails! Although, I like the tofu recommendations. B: oil-free hash browns, spinach, onions s: banana l: Chipotle with a friend. I will have a salad bowl with all of the vegan options (black beans, rice, salsas) d: leftover spinach and mushroom lasagna, steamed snap peas.

B - oatmeal with blueberries, decaf coffee with almond milk and a bit of agave L - baked potato with veggie chili S - probably cantaloupe D - veggie and tofu stir fry with brown rice S - smoothie

B - leftover chili mac L - large veggie salad (lettuce, tomatoes, beets, and chickpeas with a tofu dressing) S - probably will be a mango D - steamed veggies over rice (broccoli, cauliflower, carrots, onion, and bell pepper) S - maybe a few almonds

For a side dish for dinner this evening, for the first time, I steamed kale and then drizzled lemon juice on it. It was so good that I ate it all. I sighed with relief because I had been so worried I wouldn't like it and my worries were unfounded. P.S. I love this guy and his music too.
