Picnic season

Warmer weather and summer holidays come with picnics, BBQs and other outdoor meals. What are some of your fav bring-alongs?

One thing we really like is to bring along a batch of the roasted red pepper hummus and some baked tortilla chips and/or fresh veggie slices (carrot, celery, bell pepper). I can make a whole meal of just that (and skip all the grilled meats).

I just discovered an Indonesian rice salad, that I make with mangos & tempheh, with short grain brown rice that's incredible. what I like about it you could probably use canned pineapple, or even peaches. btw we are just barely getting warm weather here.

Sounds yummy! We've done rice salads in the past - either savory (brown rice, tomato, oregano, basil, thyme, celery, onion, carrot, a little vinegar dressing) or sweet (brown rice, chopped pecans, dried cranberries and/or raisins, celery, and a slightly fruitier vinegar dressing - apple cider vinegar vs. a wine vinegar for example) Both are pretty flexible in terms of adding or changing ingredients based on what we've got handy - the sweet one is good with some diced apple mixed in as well, for example and the savory often ends up with some garlic added.

Where's "here"? CT (where we are) is having all sorts of weird weather this year - this week is supposed to be in the mid to upper 90s which is rare for this early in the summer season (and as usual the 90 degree temps come with a chance of thunderstorms). We just barely missed the tornadoes that hit southern MA last week and we were under a tornado watch for quite a while as well. At the same time, we're also have days that get into the low 70s for a high temp and lows in the 40s. But, our garden is growing so we're happy.

Seattle. It took us until May 20th to reach 70, the first time since Nov 2010. Then it only last 2 hours. This pass weekend was the 2nd time this year both days were 70+. many sunburned folks on Monday.

Big party this weekend.. mom is turning 70. My aunt is bringing green salad, hot dogs, hamburgs, w/strawberry shortcake for dessert etc..

I am taking white potatos to slice w/onions wrap in foil and do over the fire. along with sweet potatos..

** wonder how sweet potato french fries would cook wrapped in foil??**

also i am taking a big mixture of veggies to grill... and making chocolate cupcakes..so i can put the strawberries over a vegan cake..

then a couple of portabella mushrooms or vegan burgers to grill... done..
