Planning a big salad with greens, cucumbers, mushrooms, and chick peas. Zero fat dressing. Soy milk, and I'll cheat with a fat-free but dairy yogurt.

I cheated last night eating lots multi-grain tortilla chips from trader's joe...and some potato chips...way too much...and again...eating too much breads (pumpernickel bread )from wholefood market)...way tooo much...I don't know why, but, I can't control myself...like I was so hungry for a long time that kinda hungry (should nursing/breastfeeding an excuse)...so, I need to get back to the program today...

breakfast: cereal with berries, with almond milk...
lunch and dinner...no idea...planning to go out, celebrating baby is 6 months old today...

As soon as i hear my husband starting to get up, i am going to start my blueberry buckwheat pancakes for us. really excited to try them! i will probably use m fruit sweetened jams or brown rice syrup for on top.

lunch will be curried lentil soup with toasted pumpernickle bread with avacado and tomato.

dinner will be stir fry and brown rice.

i am going to do lots of prepping for the new week today. i found mysel caught off gaurd alot this past week, and ate a few things that i should not have. i think the worst was east indian food take out...veg samosas and fritatas. i didn`t ask about vegan options..and it was either the spice or any dairy added ...but my belly was still hurting 24 hours AFTER! so needless to say...i wont be doing THAT again! Confused
3 days a week i have to bring breakfast and lunch with me to work, and the other 2 days, lunch and dinner. so i have to really focus on getting it all ready the night before..and doing what i can today to help.

tuesdays and thrusdays are the hardest. these are the lucnh and dinner days. i finish work at 6, and go straight to the gym for 2 hours while my husband has his karate class. so i need to plan to eat half my dinner while im closing so i am not starving while working out and then half when i get home. these days mess me up!
but i think i will find a routine that will work...eventualy.
any suggestions or tips?

he that takes medicine and neglects diet, wastes the skill of the physicion

Fairy Did you ever freeze individual portions?
Just cooked the curried lentil soup for the first time and it was great so I froze the rest in small containers. I froze the leftover buckwheat blueberry pancakes too. I was thinking that some of these dishes like spaghetti and marinara sauce and maybe rice can be frozen too.

I had breakfast brown rice with raisins and apricots, soy milk and a touch of maple syrup. It was a first for me and I loved it. A definite keeper.

Lunch was steamed broccoli and cauliflower with mashed potatoes made with soy milk. Sadly, I cannot be controlled around mashed potatoes and I ate too much. Fortunately they were just potatoes and not full of milk and butter.

I may do the simple marinara and pasta for dinner tonight. But I may change my mind and just do a simple salad with beans and grains and veggies.

Hi Wen,
I am right there with you for the chips.. But if you are eating WAY to much.. then there are some things i have tried
One is to eat something with them..
If i am hungry and want chips.. then i dip them in hummuas... or i add a piece of fruit.

If i am not hungry and want chips, i take a small bowl so i don't overdue it.
Also if i am not hungry and want to eat, i find something to do with my hands so i can't eat. like needlework.. or the computer typing.. whatever. keep busy and off the couch... i love a snack with nighttime tv.. but also if i go to bed hungry, i don't sleep well.
If i can get out of the habit of eating at night.. then i don't crave it so much.. cycles of life..

THat pretty much works for me most of the time. Maybe you can find something out of that to help?

hi pippin..
One thing you might try if you like white potatoes is to mix them 50/50 with sweet potatoes.. at least that way they are not ALL white..
BTW it is delious! I like to leave mashed potatoes with small pieces.. lumpy potatoes...

I feel like I ate a ton today - and I can't really figure out why? Maybe it's the pasta or the fact that most of the day was spent being a lazy bum? Haha. I still came in around 1400 calories though, so it can't be as bad as I think. LOL

Breakfast: vegan frozen waffles with a blueberry/agave/maple syrup topping. Tea and an orange
Lunch: veggie burger with leftover bean dip and tortillas
Snack: ambrosia
Dinner: spaghetti with simple marinara sauce and a side salad.

Total cereal with blackberries, sliced banana and almond milk, glass of OJ and coffee with almond milk

Hummus and Boston lettuce leaves on whole grain bread, clementine, glass of almond milk

Orange Chicken Style Tofu, brown rice steamed in veggie broth, wok stir-fried broccoli, cauliflower, snow peas, baby bellas, red pepper and baby corn

I can't believe how great we are feeling! My son and I started the challenge together, and my husband, who wasn't sure he wanted to participate, has eaten almost exactly the same things we have -- and he loves it! Very Happy

Busy day today:
shovelled out the driveway with hubby first thing, then oatmeal with apple butter and raisins for breakfast

lunch leftover veg chili

dinner tossed salad (mixed greens, diced tomato, garbanzos, baslsamic vinegar) and mixed slaw (cabbage, broccoli stems, carrots) - felt totally full up

snacked on a chobani (dairy) yogurt because that was what I was really wanting - I think the cold made me feel a need for some fat into the mix today (cause everything else was way low fat)

Wow! I had a busy day today, went to 4 different grocery stores to get ready for the week. I was short on veggies this week so I went to the farmers market and had a ball. Then I went to the regular grocery store, the health food store and finally Wegmans for specialty items.

Todays food:

B: Coffee w/soy milk
S: Soybeans
D: Blueberry pancakes

Not too hungry today, but full of energy. My sister says I'm talking a mile a minute and after 4 grocery stores I'm cleaning the house. Getting my niece and dad to start this diet now!
