RE: Recipe for Portabella Mushroom Burgers

Mmmm, mushroom burgers. There's a brew pub near me that makes one and it's so lucky it's vegan. But when I make them at home I actually just grill a marinated portobello cap. Clean and de-stem a large cap, and you can remove the gills if you like (scrape them off with a spoon). Sometimes I do, sometimes I don't. Then spray with a spritz of olive oil (or just rub it in), salt, pepper and any other seasonings you like. Rub it in well and let it sit a few minutes. Then put it in a medium-hot skillet to cook for a few minutes on each side. You can add a couple of dashes of soy sauce and/or water to help it along and use less oil. You can also do them on the grill outside, but they do take a little more oil that way. Delicious. I do the same thing but cut into slices for fajitas, except those get cumin and chile powder, etc.
