Recipe for Portabella Mushroom Burgers
Posted Tuesday, January 26, 2010 at 2:57 PM

When I was just a vegetarian, I would always buy these Portabella Swiss Burgers from President's Choice. They are so delicious. Anyway, now that I am vegan, I cannot buy them because of the Swiss cheese. Does anyone have a good Portabella Mushroom Burger Recipe that they could pass my way.

Thanks.

Mmmm, mushroom burgers. There's a brew pub near me that makes one and it's so lucky it's vegan.

But when I make them at home I actually just grill a marinated portobello cap.

Clean and de-stem a large cap, and you can remove the gills if you like (scrape them off with a spoon). Sometimes I do, sometimes I don't.

Then spray with a spritz of olive oil (or just rub it in), salt, pepper and any other seasonings you like. Rub it in well and let it sit a few minutes. Then put it in a medium-hot skillet to cook for a few minutes on each side. You can add a couple of dashes of soy sauce and/or water to help it along and use less oil.

You can also do them on the grill outside, but they do take a little more oil that way.

Delicious. I do the same thing but cut into slices for fajitas, except those get cumin and chile powder, etc.

Shanna........your Portabello Mushroom Burger recipe sounds easy and yummy.

Thanks for sharing about using them in "Fajitas. I love fajitas and that will make a great replacement for the meat! Can't wait to try them.
