I haven't tried the queso, but I have had the "Vegan Parmesan Cheese" Amazon is selling with it. It's great on pasta. Never miss the real stuff.

Hubby mixed some of the not-cheese sauce we had leftover with some leftover veg chili and heated it up and it was awesome! We're going to be making that to serve alongside chips for the Super Bowl party we always go to (food is potluck, so we always bring something that we can munch on without getting off track)

Are you making your own chips, or do you mean the kind you get at the store?

We'll probably just buy a couple kinds of chips (baked low fat, regular, etc) since there'll be a whole variety of folks with different preferences at the party (and we'll need a goodly quantity as well - don't really want to spend a lot of time on them).

Marian..
i don't make my own chips...perhaps i should try that..it would probably be better for me i just cooked tortillas..
but on the other hand... i do buy the baked ones... and i do soo much cooking for other stuff..

I will keep you guys posted.. that is unless one of you try it first! I can't decide if i want to wait and make buritos, a mexican dish, or just break out the chips..! maybe nachos... with meat crumbles, jalapenos, tomatoes, & lettuce... or is that a taco salad..? oh i loved those too..

decisions decisions..

It's hard to cook for a crowd and come up with something everyone likes. I've made two batches of the oven-baked tortilla chips so far, so I was wondering if you were going to make them. My son and I love them. When I first mentioned how bland they were to my son, he said, "But, Mom, when they have hummus on them, they taste delicious!" So true!

Next time I make them, I'm going to try sprinkling some ground herbs on them before they cool off. I have made pita chips like that in the past, but first I brushed them with olive oil before putting them in the oven. I kind of want to avoid those extra calories at this point. But, without the oil, I'm not sure if the herbs will stick to the chips, or not. Confused

Looks like the regular does contain gluten (unbleached flour) but the fire roasted is gluten-free. Just a warning for anyone like me who must keep strictly GF at all times.

I make my own chips with purchased corn tortillas. I used to just cut and bake them, but my kids would complain that they did not taste good leftover (and I would like to make a big batch to stock up for quick snacks). Then I discovered Bryana Grogan's Almost no Fat Cookbook. Her method is: dip a tortilla in a pan of water, put on cooling rack, sprinkle with salt or other seasoning, cut, bake on ungreased cookie sheet at 400 for 7-8 minutes. I usually turn mine over, and they take longer for me, but I usually don't preheat the oven.

Wow, that's a great idea. Can't wait to try it.

just have to keep an eye on the corn tortillas you buy - many are still made with partially hydrogenated fat and lots of salt. Not to mention all sorts of other things to extend shelf life.

I think I saw this on veganessentials.com. A great site to order from, I get lots of stuff there and the only problem I've had is the "cool whip" in a can got clogged up and I couldnt' fix it. Otherwise, they have great products.

The added step of dipping the tortilla in water will probably make the herbs stick. Thanks loads!

I tried the vegan Queso... YUMMM.... tonight i went for it.. i bought tortilla chips.. heated them in the oven to just warm them up... stuck one of my bean patties in the microwave.. took the torilla chips out..broke up a bean patty on the chips... poured a half jar of "queso" on the chips... i added lettuce, tomatoes, and jalapenos..

it was so darn good,i thought for sure that it was bad.. yes the chips were the worst thing.. but i did shovel for 2 hours today!!
Anyway i had to read the jar again.. i mean half a 16oz jar of "queso" .. gotta be bad.. nope! 160 calories.. no fat... i took a spoon out and ate a bite just plain!! yep good.. tastes like cheese sauce with salsa mixed in...

the jury is in.. i expect a run on this product!!! i am going to request my stores carry it... all the ones i go to,so i don't have to go to a special one.. then i am going to buy stock in the company.. Laughing

it's worth a try!! way good.. AND here is the best part.. i love nachos.. as a non-vegan i ate them maybe once a year.. at taco bell the small one.. cause they are just sooooo bad for you.. all fat.. and calories... now i can have them after i find a better chip.. whenever i want!!! and not feel bad..!! yahoooooooooo .. gotta tell johanna.....

ps..see i did learn something.. crumbled up a bean pattie.. it worked great!!

Can't wait to try it.....may have to order online if I can find it. Have to go a little ways to my Health Food sources.

I'm thinking it would have been tasty on the Tostadas we had tonight for supper.

Smile

txdoglover:
Thanks for the tip on veganesentials. I looked at their website, and discovered that they are in the city right next to mine. How convenient - and what a way to reduce shipping charges. I think I need to try the queso - the nachos sound so good!!
