Feeding Friends

A friend of mine is having a tough time and is back and forth to the hospital every day to be with a sick family member. I've offered to keep him fed so he has one less thing to worry about, but now I'm stuck for ideas of what to feed him.

I'm on a budget and the meals need to be easy to reheat. I'm not really a fan of fake meat, and I'll be eating this too, so I'd rather not use that.

Ideas?

I found a Vegetarian Chili for the Crock Pot that is very easy and cheap. It makes a lot so you should get about 3 days from it.

1 can of Black beans drained and rinsed
1 can kidney beans drained and rinsed
1 can chickpeas drained and rinsed
1 can of corn undrained (cream or regular)
1 can diced tomatoes with green chilies
1 small can (6 oz) of tomato paste
1 bell pepper chopped
1 small onion diced
1/2 tbs chili powder
1/2 tbs ground cumin
1 tbs dried cilantro

Put all ingredients in the crock pot, stir, and cook on low for 5 hours (3 on high should be fine)

I second the veggie chili - warm, hearty, definitely comfort food. A nice pan of corn bread alongside is good too(vegan is doable there too - we had some from the Veganomicon cookbook but there are lots of other recipes online)

Pasta with marinara reheats well

A big pot of red lentil soup is also very much comfort food - or do a big veggie soup with all sorts of veg and some navy beans to give it some extra punch

I love dahl. Such an easy and delicious meal. It can be bulked up further with grains and vegetables as well. We have a few recipes online. Here is one:

Indian Split Pea Dahl

Makes 6 servings

1 1/2 cups dry yellow split peas
3 cups water+ 1/2 cup water, divided
1 large onion, chopped
1 small green bell pepper, seeded and chopped
1 teaspoon turmeric
1/2 teaspoon curry powder
1 1/2 teaspoons black mustard seeds
1 juice of 1 lemon
1 salt, to taste
3 cups cooked brown rice (serve under on side of dahl)

Simmer split peas in 3 cups water for 30 minutes, or until tender. Add more water, if needed.

In a separate saucepan, simmer onion, bell pepper, turmeric, curry powder, mustard seeds, and 1/2 cup water for 15 minutes. Mix with split peas and add lemon juice and salt. Serve over rice.

We did something similar with a red lentil soup - we made it extra thick (lots of lentils). Had it as a soup one day then reheated and served it over rice the next. It was yummy!

Do you have a favorite hot curry recipe? I just got some new spices and one of them is hot curry. I was thinking soup....

I don't. But I think a hot curry spice thrown in with tofu, potatoes, chic peas, and/or other vegetables would be AMAZING! I'm getting hungry just thinking about it.

I made the chili and it's turned out great. I'm also planning to try the dahl later in the week.
