What R U Eating Tues April 19th?

HI,
so here i am.. had a lot to get done this am.. finally catching up.

b-cereal, soymilk, coffee
l-homemade white bean & veggie soup and 2 corn muffins A ginger macadamia nut cookie.
d-green salad and a black bean pattie

the white bean soup came out like stew.. i added quinoa.. 3/4 of a cup is too much.. well honey likes it like that.. i also added kale (yum) and green beans.. needless to say it is very thick.

i used the nutrion md recipe for the corn muffin and added fresh corn cut off the cob. Those are yummy.

the ginger macadamia nut cookie is from cookies take over the cookie jar.. haven't found a bad cookie yet from that book!

B: usual cereal, plant milk, vegan chocolate chips
L: leftover quinoa chickpea pilaf and a tossed salad
D: mixed veggies (bell pepper, onion, zucchini, yellow squash, maybe other stuff) with rice and black beans
S: apple, banana, one square of dark chocolate

Tomorrow, hubby is going to make "chowdah" - I believe the recipe is from Vegan Lunchbox cookbook. Cook kernel corn then blend to create "corn cream" then add that to the pot with the aromatics (celery, onion, seasonings) and throw in diced potato and chopped mushrooms. It is awesome good!

L: pasta with hot sauce and orange
S: 2 (yes 2) carrot pineapple muffins (recipe from this forum, thank you, thank you!)
D: Big green salad

This is bit of a boring day except for the muffins. I need to get more recipes because I'm in a slump.

What kinds of stuff do you have on hand? What flavors do you like? That might help folks send you only the recipes that make sense (no point sending someone who can't eat onions a recipe that is heavy in onions).

@3dogsdeb.. glad you enjoy my muffin recipe that makes my socks roll up and down! they are good huh?

i have looked at many of your previous posts..(you can do that by using the search at the top of the forum) I see you don't usually plan for dinner.

I am wondering if you might not be so bored if you had a plan for the last meal of the day? You seem to do well with both breakfast & lunch.

One i really really really enjoy is kung pao tofu. It is a little spicy (that is relative) and a little sweet..just the right combo for us. Honey wants me to make that sauce by the gallon. He puts it on everything.

But if you like to throw things together, try jeff novicks quick recipes.

I see you have high blood pressure but don't know if you like spicy or will eat tofu. Or do you like to cook or need something FAST. I am encouraged that you do boil your own beans.. have you tried freezing them yet?

I'd be happy to share another great recipe.. if i have one that fits what you like.

Beans are SO versatile - last week we took some white beans, black beans, rice, raisins, craisins, and cumin (and I think a little cider vinegar) and mixed up a lovely warm rice salad.

Somewhere around here is a quinoa-chickpea pilaf recipe that is awesome paired with some quickly braised greens (kale, bok choy, chard, etc).

Even something as simple as adding black beans and chickpeas to a salad can change the whole thing (for the better). I never would have thought of adding cold black beans to a salad until I saw them on a salad bar while we were on vacation last week - yum! Now I can choose black beans, chickpeas, or both depending on what we've got handy when I pack lunch.

Hubby did a search online and found an awesome red lentil soup (vegan). It pairs nicely with any kind of whole grain bread or crackers.

Also, my lunches are typically leftovers from dinner so dinner is the meal that gets the most planning rather than lunch.

I agree that if you are in a slump, planning something in advance can really help. Sometimes I just read my cookbooks over the weekend (I have several... sort of addicted to them)and just pick a couple of new things to try. Then when I shop, I can be sure to get what I need.

For the next two nights I am hosting my parents chez moi. They drove 90 miles through a snow storm today to get here, no lie. They are intrepid seniors. They want to go out to eat both nights (I will try to take that as they want to treat me and not make me cook my crazy vegan meals... and not that they don't like my crazy vegan meals).

b: steel cut oats with dried apricots, raisins and honey
s: 1/2 piece leftover lasagna (really good cold!)
l: leftover calico beans, sugar snap peas
s: a sf vanilla soy latte from Starbucks. I haven't had one in MONTHS. It was soooo sweet. Blech.

d: I will let my folks choose. Either Pho Thai (Thai and Vietnamese restaurant) or Olive Garden. Or maybe Outback where I can get a salad and a baked potato.

B - 2 slices Ezekiel bread with all fruit spread
L - Had lunch at Ruby Tuesdays. I had the salad bar and a trio of sides (sugar snap peas, grilled zucchini, and sliced tomatoes with balsamic vinaigrette). The vinaigrette probably had too much fat, but I managed to keep it vegan, so that was something.
S - cantaloupe
D - leftover tofu veggie stir fry with brown rice
S - probably a smoothie

It is surprising to find that "grilled zucchini is almost 1/2 fat!! I always thought grilled was "good" I just recently found this out by checking out the moe's website. They must put some sort of fat on it so it doesn't stick to the grill.
if you want something grilled, you really have to ask special for them to grill it "dry" not with additonal oil. also.. if you really go for it.. ask if they grill meat on the same grill.

Yeah, I actually ended up not eating much of the zucchini because it did look like it had been marinated in some kind of sauce. It definitely looked oily or buttery. I knew when I ordered the tomatoes that they were in a vinaigrette, I just didn't expect the zucchini to also be high in fat when it is billed as being part of their "light and fit" menu.

I had the same issue with the "steamed" vegetables at another restaurant last week. The steamed vegetables came covered in a buttery sauce. I talked to the server and I couldn't get just steamed vegetables without the sauce!! I ended up not eating those either!

For part of dinner tonight I was trying to decide what to make and I saw a red bell pepper and said to myself, "I see dinner", remembering what Caroline Trapp said on "The Grocery Tour"(DVD). I sauteed a red onion and the red bell pepper and put it in 2 warm multigrain tortillas and it was delicious.

Then I decided to try Collard Greens for the 1st time (not in a smoothie). I tried only one big leaf cause I was hesitant. I sauteed garlic in water and then added the chopped collard green and found it to taste very good to my surprise.

So my dinner included Red and Green colors of the rainbow. Smile

Dinner update. We went to the Vietnamese restaurant. We shared veggie spring rolls and i had the mock duck with spicy veggies. Oh. Joy.

B Quinoa, almonds, dried crans, hemp milk
L Green smoothie - hemp milk, kale, blueberries, almond butter
S Organic dark chocolate bar
D Huge Green salad, 2 rice cakes, tofu "mock egg" salad

I have to say that I'm feeling pretty good. I seem to be hitting the late night snacks less.

Very boring day today but I'm doing good food wise!
B-Oatmeal w/almond milk
Snack- Lettuce (sprinkled Braggs amino liquids)Yumm!
L-Lentil soup w/veggies
Snack-Fresh fruit cup(mango,pineapple,cucumber, watermelon,coconut, and hot chilli powder w/lime) Delish!
D-Were having peruvian bean tostadas w/Nopal salad

I also got in some excercise today! 30 mins on eleptical this am and for lunch I went on a 45 min walk! Very Happy
