HI All,
So today is a day off for me. It's a cooking day to support the weeks eating.
I had my black beans soaking overnight, so they are cooking as we speak..

I plan on making my honey a chocolate applesauce cake w/choc frosting.. and some carrot/pineapple muffins that he likes to take to work for a snack. He doesn't have to watch his weight at all... He reminds me of Rip Esselstyn.. active. runs.. lifts.. so I can feed him all the fattening stuff.. I get 2%, he gets the rest. It keeps him happy.

With the black beans, i plan on making black bean patties that i can stick in the freezer to have on hand at a moments notice w/sweet potato fries..yumm..
I JUST found Vital Wheat Gluten. It is in the recipe out of veg.con.. I had no idea what it looked like or where to find it. a box? dairy? a can? so while at the health food store yesterday i asked for some help. It is in a box next to the egg replacer. It's made by Arrowhead MIlls.

Somewhere here i am going to fit in a soup...It is either Creamy Broccoli (rice milk) or Pumpkin Corn. I am leaning toward the Pumpkin..

So anyway todays food is going to be oatmeal..had that yesterday for a change.. it was good with the cranberries in it.. also a banana..

lunch i am going to try waa laa lunch soup... pasta/beans/spinach/spices..

dinner.. i can't wait... Kung Pao Tofu

There is even a video to show me how to cook it!! i have made it before..and we both love it.. now i have even got the spicy korean bean paste!! (had to drive over an hour for it). .. so i am anticipating this to be great...

CCH you have a busy cooking day today! That Kung Pao tofu sounds amazing.

For me it is back to work Monday.
I had oatmeal with cinnamon and fruit for breakfast.

In my lunch tote I have some leftover curried veggies over rice, some frozen broccoli and cauliflower to warm up for a snack, and some butter beans that I did in the crock pot yesterday. I'm not sure what combination I will eat that all in, but some is for lunch and some for snacking. I also have a honey crisp apple and some globe grapes. Never hurts to be well stocked!

For dinner, I don't quite know yet. I didn't do the pasta with marinara last night (got distracted and ended up eating leftovers). So maybe I will do that tonight.

The recommended meal for tonight is BBQ portabellas. I don't have the ingredients to make it today but I made it during the last kickstart and it was a hit!

Breakfast: Cereal with soy milk

Lunch: Left over couscous confetti salad

Dinner: BBQ portobellos but instead of spinach I'm using kale

Snacks: applesauce and clementine

I decided to become vegan with this kickstart,so if I'm missing something please let me know. I can use the help. Smile

Soup is done! I just have to add the lime juice & garnish with celantro. It is the first time i have made this.. and it came out good... spicy.. just the way we like it.

do you all know how to include links? it's easy..

just go to the webpage you want to share..go to where the address is, left click to select, then right click, see copy? right click on that.

then go to these post things.. click on the url with the underline.. right click your mouse.. click on paste... then click the url with the underline again.

it looks like a lot of directions.. but it is simple copy and paste that you probably use anyway.

B: GF oats with berries, brown rice protein, stevia, and cinnamon
L: Missing egg recipe from Kickstart but I'm eating mine as an open face sandwich with one piece of bread with a side of asparagus
D: Salad, brown rice pasta with chreese sauce, chickpeas, and peas
S: baked sweet potato with Smart Balance Light

It's the first day of my spring semester as well as birthing class so I'm in for a very busy day.

For whatever we lose (like a you or a me)

I'm eating leftovers today but I can't wait to try the fruited breakfast quinoa & the missing egg sandwhich. Breakfast is my favorite meal.

for breakfast i am going to have oatmeal with applebutter and raisins. with a glass of soy milk
lunch will be a missing egg sandwhich. I have never used vegannaise before, and as i was mixing it into my tofu i was getting excited to eat it! so i am looking forward to that! i have some carrots and celery, some oven baked corn chips and salsa as snacks.
dinner will be bbq style portebellos with kale.

b: usual, cereal and almond milk
l: leftover red lentil soup and a tossed saled w/balsamic
snack: apple, banana
dinner: having guests over for dinner, serving vegan quiche (One with spinach, one with broccoli), tossed salad, and a vegan pumpkin streusel cake for dessert - definitely not a low fat, low glycemic item but it looks and smells yummy (from Veganomicon). We figure that serving non-vegans a totally vegan dinner is about as far as we'll push it right now, gotta give them some yummies for dessert (thus the sugar and oil in the cake)

Next time i will use 2 cans of beans. Also I was VERY surprised to learn that the "sauce" is wayyy good. I mean it has apple cider vinegar, sea salt, evoo (wonder if we could leave it out?) lemon juice & nutrional yeast...

I did not use 3/4 cup nutrional yeast.. i added it last and mixed & tasted till right.. it was about 1/3 of a cup i stopped at.. it was perfect for me and hubby..

wicked easy..

@canyon.. your link works! good job! to quote someone.. go to their post. hit quote then their whole email comes up.. it has a at the begining and a at the end..
you can leave the WHOLE thing.. BUT if you just take out what you don't want in between you can just get any part of the post. I haven't tried but you could probably add your own and the closing to get a second quote out of the same post.

See the first url opens, and tells the computer how to read it. the second one with the backslash says this is where it ends..closes the first one..

same thing with color, font.. etc...I think it is called html code.

Hi everyone!! Just getting started on the kickstart!
Today was my first day!!

Oatmeal w/cinnamon and raisins

Veggie burger and mexican corn salad

and I have what is probably a silly question....what
section of the grocery will I most likely find the
tofu....that is if they carry it???? thanks for any help!!!

haa you had the url in there and it made links that did not have a url.. so to quote you need to put quote in the brackets.. open and close..

url is for a webpage link.. like check out this recipe.

toful in my supermarket is over by the fresh veggies at the end of one of the veggie cases.. it is not frozen.. around it .. there is tofu turkey... and tempah..

Just wondering...if I'm looking at the right product, Vegenaise (original) contains 'soy protein' - is that the 'partial' soy that isn't a good idea?

Also, it looks like 1 tbl is 4% of the RDA of fat (and RDA is based on 2000 calories intake generally), so would this have more fat than it should for someone who is eating less than 2000 calories?

I have to say, I gave quinoa another shot today and it was delicious!! Turns out I like it better when I rinse it first. The barbecue-style portobellos were AMAZING!!!

Breakfast: cinnamon-raisin oatmeal sweetened with some light agave nectar
Snack: small apple
Lunch: leftover pasta with simple marinara sauce
snack: ambrosia salad
Dinner: barbecue-style portobellos with quinoa.

Must say I'm having a great time with all these new foods and recipes. Also, I'm going to miss all these good ideas and suggestions on the forum when this is over. (I will look into the other sites mentioned previously).

Todays meals:

B: the standard (but I like it) Oatmeal & coffee w/soy milk

L: Huge salad with all kinds of greens and things & chickpeas

S: Hot air popcorn w/nutritional yeast

The yeast was suprisingly great, but anyway to make it stick? -- it all ended up in the bottom of the bowl

D: Cream of broccoli soup (it was good - the whole family liked it!)

omg!! the kung pao tofu is a 10 out of 10.. we added as much veggies as the sauce could handle. we added lots of broccoli crowns.. and a can of the asian style baby corn..
wow oh wow.. you can't get better kung pao anywhere .. if a place made that . it would camp out on their doorstop or just buy stock in the company..
amazing amazing yummy recipe.. soooooo good...

no lie.. i licked my plate....!!

cch22-stop it! You're killing me here. Send me some of that kung pao Now!! I want it now... but I digress.

I have been snacking today so won't break it down and B L and D, but here's what I've eaten so far today:

coffee
burrito with rice and beans
bowl of lf granola, alm. milk, banana
carrots/red bell pepper with cilantro hummus
2 rice cakes

tonight I will have more leftover tofu pad thai and tabouleh.

Getting more and more energy every day-yeah!
