Recipes that require bananas always seem to need overly ripe bananas, how come?
Well, bottom line, they have the most banana flavor and mash easily. That's why you use overripe bananas for bread, less ripe doesn't have enough flavor and won't mash properly.
In addition, they are nice and sweet naturally so added concentrated sugar can be kept to a minimum.

Isn't it true, the riper (sp?) the banana, the sweeter the banana, the sweeter the banana, the more sugar it contains? If so, what about those who are diabetic?
