Easter dinner ideas?

I know it's a little early, but since the kickstart is almost over, I thought I'd ask. Does anyone have any ideas about what to make for Easter dinner? Around here, it's kind of like a mini-Thanksgiving, where we normally have ham, cheese grits and lots of other non-vegan things. Unfortunately, our house is kind of a central location for our family in NC, so we normally have dinner here and, honestly, I think I'm stuck as far as making the ham, since none of our family in this area is even vegetarian and they expect it.  So, I figured I would just make the ham and then make everything else vegan. Any suggestions on what to make?

I think you can make most of the meal vegan without anyone being the wiser. I plan on making mashed potatoes, yams, stuffing, and green beans. Its very very easy to make vegan stuffing. Just buy the packaged bread pieces (like pepperidge farms cornbread stuffing, or another vegan type), use vegetable stock, and vegan butter. Same thing with candied yams. Use vegan butter and brown sugar. no marshmallows!  And mashed potatoes, pretty much the same. use vegetable stock instead of milk, and vegan butter.

Love Your Body Veggie Lasagna OK, so I added the "love your body" to the title. But this recipe is amazing, it's from Engine 2 and from my first bite, I thought "This is good "company" food!" Since then, I've had numerous readers who made it to serve "mixed company" (carnies at the table) and everyone loved it! I know it's not like a "ham", but hey, who needs pig on the table when you can eat like this? Bean appetit! Lani

By the way, as an alternative to candied yams, try baking whole yams in the oven in their skins. They are fantastic, super sweet and yummy!

I posted a great sweet potato casserole recipe on this site under the "Sweet Potatoes" title. It's now a few pages back. It's very good, would be great for Easter and you can make it ahead of time.

It's really her boyfriend (who'll be visiting from her Texas) and her who will make the biggest stink if there's no meat. Actually, the boyfriend will actually call me up before he even gets to NC and tell me (not ask me) that he HAS to have red meat for whatever meal they are coming to at our house. Normally, I just tell him to go ahead and pick one up on his way to our house, which doesn't usually go over that well, but I think he's being super rude by demanding a specific food like that when he's the guest. (Sorry - can you tell I've recently had a run in with him? LOL) I love baked yams, too! I might just bake them and then have brown sugar, cinnamon, and butter on the side like they do at steak restaurants for those who like them super sweet. I think that lasagna looks awesome, too, and I know my family would love it but my in-laws are a whole other story. LOL I'll definite make it but probably not when the in-laws are here. It's just my mother-in-law's boyfriend. Of course, I want to try to accommodate any guests we have but I just think that's super tacky to demand certain things when you're a guest in someone's home.
