Having a great time!

I've taken part in most of these 21 day Kickstart programs, and each time I learn more and get more excited about doing it. In the past 1.5 weeks, I've lost weight (as I have at other times during this program) and have found lots of encouragement along the way. I've had problems in the past with staying strictly vegan (I really love cheese!), but I'm finding myself really getting more and more into it this time. How about you?

This is my first time, my husband is doing it with me, and both of us are having fun with it. I am really shocked that I don't miss cheese much at all.It's really fun to learn how to cook all these interesting recipes. I feel healthier over all and am getting to be creative with cooking.

Also - I'm actually starting to like vegetables. Which is amazing to me, lol. I was chopping some zucchini and yellow summer squash and had a hard time not snacking on it while I was preparing diner. This is very unlike me. Previously my diet revolved around bread and cheese.

I have been trying to eat vegan since early last summer. This is my first kickstart program- never heard of it before- and its great. I am learning so much too....when I first read about curried lentil soup I thought it would be too strong tasting and so didn't make it but later decided to get out of my comfort zone and found out it is not too strong and is really delicious. I am hesitant about things like kale that I never tried before and didn't quite understand the enthusiasm over green smoothies but after I realized I wanted to sneak in more vegetables in my diet, figured out the green smoothie, without tasting the vegetable, is a fabulous idea for getting more vegetables.

I did the September kickstart and hubby and son are mostly along for the ride (neither of them is strictly vegan, hubby is more vegetarian and son is free ranging omnivore who loves veggies and reads labels). Hubby is the head chef at our house, so having him on board is important. We found some excellent recipes last time and this time we're expanding our range even more. Rainbow chard is becoming a staple item on the grocery list; we've discovered that lentils are awesome; and we're using quinoa more and more - hubby jokes that soon he'll be a 'level 7 vegan' (a quote from the Veganomicon :lolSmile

this is first time for me and hubby, so far so good, only second day, we both have been vegetarians for about a year, and were not perfect..surprisely not missing the dairy

The only time I miss dairy is when I'm wanting something with a creamy texture, the way sour cream or yogurt would be. Alas, tofu and I are not cut out to be together so a lot of the usual means of getting that texture are out. We left off liquid milk well before even being vegetarian - the fat and sugar in it didn't bode well for either hubby's cholesterol or my blood sugar (I can have cereal with plant milk, but cereal with low fat dairy milk raises my blood sugar too much).

Anyone know of a creamy non-dairy non-soy option?

Hi, Deb,

For creamy texture without soy, there are various options depending upon the recipe.

For example for creamy soups, just puree some of the veggies and broth, then add back to the soup pot.

For salad dressing, you can add a few cashews to the blender to create a creamier version.

For other recipes, adding some pureed white beans can be a way to give a creamy effect.

With some experimenting, you can probably figure out a way to make almost anything creamier.

Thanks. We do many of these things (the vegan quiche uses navy beans for the egg/cream combo of a standard quiche). I'll have to do some experimenting for things like toppings (ex: sour cream that comes with tex-mex foods) that are not exactly blended into the recipe but are more akin to condiments.
