Easy Veggie Stir-Fry

Easy Veggie Stir-Fry 8 oz. pkg of mushrooms (parboiled and sliced) 1 1/2 cups of sliced bell peppers ( the yellow,orange and red peppers add nice color) slice onion to taste( I used red onion) 1-2 cloves fresh garlic (minced) 2-3 baby bok choy (chopped, separating the stalk part from the green leaves) 1 cup snow peas (chopped in half) 1 small pkg. of bean sprouts 2 heaping tsp. of Chick'Nish seasoning (dissolved in 2 cups of hot water. I also added a little Bragg's Aminos to this for more flavor)You may not use all of the liquid, depending on how much sauce you want. 2 heaping tsp. of cornstarch (dissolved in 1/4 cup of water) 2 -3 cups cooked brown rice (for my husband I will make 1/2 white rice and 1/2 brown rice) Bragg's aminos or soy sauce In a large deep non-stick skillet or wok style pan, pour a small amount of Chick'Nish mixture into heated pan.( I use med-high to high heat when stir-frying) Add onions, garlic, peppers and bok choy stalk; stirring until partially cooked. Next add the mushrooms, snow peas and bok choy greens. Stir fry for a few more minutes until cooked to your taste. Continue adding more of the Chick'Nish mixture as needed keeping it all moist. When veggies are cooked to your likeness, add more of the Chick'Nish mixture to make a sauce; push veggies to side of pan and begin stirring in the cornstarch mixture a little at a time until it reaches your desired thickness. Add bean sprouts last and stir for another 2 minutes. Serve immediately over rice. Season with Bragg's Aminos or soy sauce as desired. *****Note: You can play around with this recipe omitting or adding your desired veggies. Napa cabbage works well, in place of the bok choy. Adding any kind of greens would be good too. If you like the chinese or regular eggplant you could use that in place of the mushrooms or add some tofu chunks. Non-Vegan hubby like this one a lot!
