I have done gluten-free weeks here and there. I don't have any problem. I usually opt for brown rice, beans, and greens. I will eat tofu, vegetables, and fruits per usual. I have experimented with gluten-free baking mixes for pancakes - pretty good stuff! I even have my favorite gluten-free penne pasta that tastes great with marinara sauce and vegetables. I'll have oats for breakfast, rice crackers for snacks, and corn tortillas in place of flour tortillas with my burritos and fajitas. I'm careful with my sauces. I choose tamari (wheat-free) or Bragg's over soy sauce. There are so many great grains that are more available than ever - quinoa, buckwheat, dozens of rice varieties, and oats to name a few. Great starches to add to any meal are corn and potatoes. I hope this helps. I enjoy being gluten free. It helps me to expand my options!

Read labels (but then you already knew that). There are lots of GF products available now (breads, pastas, etc) that just happen to be vegan but not all GF products are vegan (and vice versa). Of course, if you're working with lots of fruits, veggies, beans and legumes and alternate grains like brown rice and quinoa, you're pretty much set. Also, the Veganomicon cookbook has symbols to indicate which recipes are GF. And, the Vegetarian Times website lets you select for vegan and GF recipes (that is, you can have it search out recipes that are vegan, GF, or both). --Deb R

Peacefirevegan, I have Celiac so I am completely gluten free, I can help you bunches just don't have the time at this moment to type it all out. If there are specific questions, you can send me an email and I would be happy to help, or I can post some items here later when time permits. Best wishes, Kym

Just gotta be careful with the oats - some people react to them as they do to wheat products.--Deb R

It's just a caution that -all- oats might not be a safe choice.--Deb R
