Easy Veggie Tacos and Tostadas

Easy Veggie Tacos
1 15oz. can of black beans (drained and rinsed) 1 can of Mexicorn (drained) or frozen corn Chopped lettuce Chopped tomatoes Chopped green onions Sliced black olives Chopped canned green chiles Chopped cilantro Salsa or hot sauce Sliced avocado or mashed up and seasoned with little garlic powder, onion powder, cumin & salt. Corn tortillas - softened ( I use mircrowave) Romero Brand yellow corn tortillas are my personal favorite. They are a little larger and have great flavor ***Optional vegan cheese grated (I haven't found one I really like yet, so I eat them without cheese) Mix black beans and corn together; heat (I use microwave) Fill softened tortillas with bean/corn mixture; add your favorite fixins & enjoy.
NOTE: I've taken all of the above ingredients and made a great salad. Can also serve on top of brown rice. Yummy! Veggie Tostadas
Corn tortillas (small thin) Vegetarian Refried Beans (canned or homemade) Chopped green onions Sliced black olives Chopped canned green chiles Chopped tomatoes Chopped cilantro Avocado slices Salsa or hot sauce ***Optional vegan cheese grated (I haven't found one I really like yet, so I eat them without cheese)
Heat oven to 325 degrees. Place flat tortillas directly on oven racks. Toast to desired crispness. Usually about 10 - 15 minutes. Use tongs to turn them over about 1/2 way into cooking time. Watch so they don't get over cooked. Spread heated beans on top of crispy tortilla. Add your favorite fixins and enjoy. *****Both of these recipes are very "non-vegan" friendly
