What R U eating Wed April 20th?

Hi All, b-cereal w/yucky soy milk from the dollar store. won't buy that again.. says soy reduced fat.. what they mean is they put a lot of water in it. l-soup & corn muffins d- whatever my honey fixes.. he saw bob from biggest loser on Rachael Ray.. his stir fry looked good.. of course we have most of the ingredients.. so i think he will be making that. http://www.rachaelrayshow.com/food/recipes/bob-harpers-stir-fry/

b: usual l: probably leftover bean patty on pumpernickel bread with some chowchow on the side and a tossed salad d: hubby is making chowdah - corn "cream" and mushrooms - yummy! s: small serving of chowchow (I love the stuff! and we just got a jar when we visited Lancaster last week); alas I also diverged big time and had half a dozen Hershey dark chocolate miniatures. You take anything you've got (carrots, cauliflower, bell peppers, onions, green beans, wax beans, lima beans, kidney beans, cukes, possibly even cabbage, etc.) and pickle them up in a mix (since, presumably, you've already canned the best of all of these separately as they were growing and only have bits left but not enough for their own jars). It's kind of similar in taste to bread and butter pickles. Hubby already makes some awesome "kinda sorta sour" pickles so once we get to the growing season, we're gonna try our hand at homemade chowchow. If it's in chunks (whole florets and beans and such), it's a great side dish, like bean salad; if it's in a smaller dice, it makes a nice relish for topping burger patties. It does use sugar/sweetener but there's no fat in there anywhere. There are many recipes online (google "amish chowchow recipes" to find them).I guess today's theme is "chow", isn't it?  --Deb R

B - cereal with soy milk, small glass of OJ, decaf coffee L - quickie quesadilla with roasted red pepper hummus and veggies S - cantaloupe D - roasted potatoes and something out of the freezer (veggie chili? beans? carrot and roasted red pepper soup?) S - baked tortilla chips and salsa

i just found a new bean pattie recipe i have to try! It came off the pcrm thread on facebook. Black Bean Oatmeal Burgers 1 1/2 cups cooked black beans 1 14.5 oz can diced tomatoes (very well drained) 1 cup fresh cilantro or parsley (we used cilantro) 1 teaspoon ground cumin 1 clove garlic 2 green onions 2/3 cup shredded carrots 1 3/4 cup rolled oats I just put all these ingredients in the food processor and turned it on. It helps if you pre-chop the veggies, smash the garlic, and really drain the tomatoes. I used a big dough scoop to make 8 patties, and I pressed them flat on the tray. Bake on parchment paper or a silpat at 400 degrees for 20 minutes, carefully turn them over and bake another 15 minutes. Eat right away or let cool and freeze. Grammie has made a white bean and pesto variation with success. I think there is much customization potential here.

Ha! To me Chow is actually "Cio Baby" which is what I will say when I drive around town on my pink Vespa that someday I will be the proud owner of. I will wear a head scarf and movie star sunglasses. Hey, One can dream! B: Pip's Big Bowl with soy milk, bananas and raisins. s: Watermelon l: Leftover mock duck with spicy veggies and rice (white rice, unfortunately) s: I have an apple. But may make popcorn too. d: My parents chose Indian tonight. We are meeting my friend there. I love Chana Masala so that is probably what I will get.

Vespa's Rock! Hey cch22 I actually bought the powdered versions of Soy & Rice milk. Saves a lot of money. The soy doesn't taste as good as the Eden rice/soy blend, but it works great for cooking & baking since you can control how creamy you want it. anyhoo, today....food: B: coffee L: Broccoli & carrots, steamed. D: Black Kale, Onions in a Balsalmic reduction, green beans, brown rice.

B: One Van's brand gluten free waffle. 1/2 blueberries 2 tsp. of Earth Balance Black decaf L: Left over Pad Thai noodles with veggies. Added some peanut butter for a better taste. Apple juice 1/4 of a banana. The other 1/4 was too mushy. 1/4 of a Bora Bora bar. D: Don't know yet. Hope everyone is having a good day.

B - leftover steamed veggies L - leftover chili mac D - stir fried eggplant, mushrooms, onion, and peppers over rice S - fresh fruit and a homemade cereal bar (a work in progress - trying to make rice crispy bars)

Tonight I tried for the first time: Brussels Sprout, steamed with lemon juice sprinkled on top...it was okay but not my favorite..maybe I will use fresh instead of frozen next time or cook them a different way. Thursday: Asparagus is the plan. Hope I can find a simple easy way to make them that tastes good.

Brussel sprouts arn't my favorite either. LIke mini cabbage.. but a little tart.. I wonder if they would hold up in a stir fry or broiled brown/burnt or maybe roasting would bring out a flavor that is good with them. .. consider nuts?? nutty brussel sprouts sound worth a try. Haa haa i wonder if they would fit perfectly in a round steamed dumpling wrap? What could you put in there with it? Asparagus on the other hand is EXCELLENT.. I used to spray with a little olive oil.. then sprinkle w/garlic... and grill it. Garlic goes great w/asparagus..gotta skip the oil.. maybe use egg replacer and then sprinkle w/garlic.. or soy sauce & garlic. What sounds good to you? Lemon is for broccoli!! OMG i would very happily drive home in a hurry to have lots of lemon on broccoli...

Roasting brussel sprouts is definitely the way to go. Slice them in half, toss them in a tiny bit of olive oil and sea salt and pop them in the oven. The browning carmelizes the outside a little. I love when the outer leaves come off and they're all brown and crunchy. Yum, yum, yum. I never much liked brussel sprouts until I tried them roasted.

I love roasted brussel sprouts. I pour a mix of water and Braggs/soy sauce (maybe 1 T for a 9x13 pan) over them. When they are done I drizzle with Balsamic - totally addictive in my book! I usually roast other veggies with them (cauliflower and daikon are my favorites), but only put the balsamic on the brussels. My young kids love them just steamed, then they eat them leaf by leaf. It takes a long time!

I had: Bfast: 3oz edamame 1 cup buckwheat 1 Brazil nut Green drink with 1 tbsp Flax (mixed veggies from last night and some raw veggies cuke, cel, tomato, radish, kale) lunch: Brown rice wrap with 4oz red pepper hummus (kickstart recipe) and veggies and 1/2 small avocado big salad with vinegar 1 large pear dinner: 4oz french lentils mixed with one cup homemade red sauce with fresh tomatoes, onions, mushrooms, garlic 1 cup red quinoa 1 tbsp nutritional yeast sprinkled on lentils and red sauce 1/2 oz ground pumpkin seeds sprinkled on lentils and red sauce 1.5 cup asparagus 1 orange I'm a little hungry, now several hours after dinner, but I'm just gonna go to bed. Lost 5 pounds in six weeks. (I started on Dr Furhman's six wk challenge before I started the kickstart.) I like the Kickstart better as it's not so restrictive on carbs. I was getting too hungry with the mounds of low carb veggies and small amt of grain. This is more satisfying and I'm still losing wt. Jo in No Cal
