Pancakes

I have seen on this board you can have pancakes. However, being the terrible cook I usually am, I normally use mixes for pancakes. Every mix I have seen has either milk or egg in the ingredients. Which mix, if any, do you use? If you make from scratch can you please share a recipe?
Also, I am going out for Easter brunch and I thought I would be safe with pancakes,but after looking at mixes I am thinking not. Besides fruit are there any safe options? I am usually pressed for time and haven't been too creative with my food choices, I have eaten A LOT of rice and beans, so this is my first time eating outSmile

Pancakes are super easy to make from scratch - we just add a little extra water or plant milk in place of eggs and it works fine. The key is knowing the texture you want (which would be the same as the texture/consistency as the mix). We like to make ours with a mix of whole wheat and buckwheat flour.

As far as going out, most breads are not made with egg/dairy (but you can double check once you're there) so something like a bagel or whole grain toast with jam would work (in addition to fruit). Oatmeal works (most restaurants that do breakfast have oatmeal, cream of wheat or something - make sure it's not instant because that usually has dairy included in the mix). If it's an "Easter brunch" event you're likely to have a fairly wide range of items from typical breakfast foods to lunch foods (soups, salad bar, etc). If it's a chain place, check their website ahead of time. If it's a local restaurant, sometimes it pays to call ahead and explain that you're vegan, you'll be coming in for their Sunday brunch, are there non-meat, dairy, egg dishes included in the buffet?

ouch I can't type anymore, but here are a few from a couple books I have. Hopefully they will help you in developing your own take on pancakes Smile

Weekend Pancakes - Vegan Yum Yum Book

11/2 cups Soy Milk
1 cup spelt flour (or sustitute all purpose flour)
1/3 cup all purpose flour
2 tablespoons oil
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon extract (any flavor)
1/4 teaspoon salt
1 to 2 tablesoons water to thin batter if needed
Earth Balance margarine & Maple Syrup to serve
(I'vemade these and they were good. I used agave instead of sugar & no white flour, I used spelt & ww)

Blueberry Corn Pancakes - From Veganomicon- Isa Chandra Moskowitz & Terry Hope Romero

3/4 cups all purpose flour
1/2 cup cornmeal
2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons canola oil (any mild tasting oil will do)
1 1/4 cup plain soy milk
1/3 cup water
1 teaspoon vanilla
2 tablespoons pure maple syrup
2 teaspoons grated lemon zest
1 cup fresh blue berries

Banana Flapjacks - Vegan Brunch - Isa Chandra Moskowitz

2 very ripe medium bananas
2 tablesp oons canola oil
½ cup alm ond milk (or your
favorite nondairy milk)
½ cup wat er
2 teaspoo ns apple cider vinegar
1 tablesp oon pure maple syrup
1 cup all -purpose flour
2¼ teaspo ons baking powder
¼ teaspoo n salt
¼ teaspoo n ground cinnamon
(optional)
Pinch gro und allspice (optional)
Cooking spray

Gluten-Free Buckwheat Pancakes - Vegan Brunch - Isa Chandra Moskowitz

½ cup buckwheat flour
¼ cup quinoa flour
¼ cup corn flour (not cornmeal;corn flour is finer)
2 tablespoons tapioca flour (cornstarch or arrowrootwould be okay, too)
1 tablespoon ground flax seeds (or flax meal)
1 tablespoon ba king powder
¼ teaspoon cinnamon
¼ teaspoon salt
½ cup soy milk (or othernondairy milk)
½ cup water
2 tablespoons pure maple syrup
2 tablespoons canola oil
½ teaspoon pure vanilla extract
Coo king spray

Perfect Pancakes - Vegan Brunch - Isa Chandra Moskowitz

1¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon (optional)
2 tablespoons canola oil
1/3 cup water
1 to 1¼ cups plain rice milk or soy milk
2 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
Cooking spray

Sorry for any spelling errors or the crazy way some look I typed some in notepad and some in word and they copy very differently.

Okay that officially rocks. Is it one that all you have to do is add oil or milks too?

Don't get me wrong I love making them from scratch, but sometimes when you get a craving for a pancake you just don't want to wait,lol.

With the mixes I use that call for eggs I either leave it out, use ground flax or applesauce and they come out fine.

http://christinacooks.com/_webapp_3187068/Pancakes. You can leave the oil out. I make another one like this, but with 1 c pumpkin/squash, big dash on cinnamon, 1/4 c more flour, and less milk. They are my favorites.
