I may have done something very, very wrong

Oh what have I done?! I went and made Vegan Black Bean Brownies. My first attempt at vegan baking. Oh so deliciously good. I had to just leave a couple out and freeze the rest of them! Far too dangerous to just leave sitting on the counter.

I've got the same thing with a whole list of recipes: vegan chocolate pudding, vegan pumpkin streusel cake, vegan chocolate chocolate chip cookies,.... So, they are made for special occasions when I'd be eating a little something special anyhow - and likely would have folks to share it with so it's not just me, hubby and son (since the three of us can't eat it all up at once!) I'm making the pumpkin streusel cake for an Easter brunch potluck this weekend (and a vegan spinach quiche that uses white beans). If I eat slowly enough, there won't be any of the cake left by the time I'm done (or maybe just a little so I can have a taste but not a whole lot)

greenish, what recipe did you use? I recently made some from the happyherbivore.com, one daughter loved them, the other not so much. I put so little sweetener in, that I don't care if she makes a meal of them. They are basically beans, oats, bananas and rice (from the brown rice syrup). She "hates beans."

Here's the recipe I used. (I didn't add the mace or cayenne.) But don't say I didn't warn you!

Ha! This is exactly why/how I can be an overweight vegan! At least you had the self-restraint to freeze the overage of yummy brownies. Rolling Eyes

The recipe calls for "1/2 vegan choco chips". Did you use 1/2 cup or a 1/2 bag?

Thanks for that. I just went to the recipe with photo and they look good. This may be my Easter holiday treat since I am staying away from chocolate. Also I need to find some ways of getting more beans in my diet (at least thats my excuse) Very Happy

Oh wow! Just in time for Easter... I can't wait to try these! Just don't know where to get the vegan chocolate in my area...but the search is on!

Read lots of labels - not all vegan chocolate is labelled as such. Ghirardelli semi sweet chocolate chips have no milk fat or milk powder or whey or anything - and they're available in most grocery store baking aisles. One question is where you stand on sugar (processed sugar is often processed through bone char) - that would also make a difference. For me, I try to avoid it BUT there are some things that are easier to find and more affordable if I tolerate that little bit. It's a personal choice for each person (just as using honey is and other similar

It's from the Veganomicon cookbook - it's totally not low fat or low sugar but is very yummy for a treat. I don't know if I'll remember to post it - I'm at work (cookbooks are at home) and once I get home, I rarely go online. Easiest thing would be to find a copy of the cookbook but I'll try to remember to post it.

Ok - now I can relate. I thought we (mostly me) deserved something sweet for Easter holiday since we are not doing the Easter egg thing - chocolate or otherwise. I made the vegan black bean brownies after your recommendation. Had brownies for Easter, took a slice to work for my lunch today, had a slice for dessert after dinner tonight and have also put the rest in the freezer so its out of sight. This stuff is good Laughing

@Christine.. you could always stick some fresh sliced strawberries on top of your brownie.. maybe even some soy ice cream..

also.. i saw a recipe for whipping coconut cream that is on top of coconut milk. It is on chef cloe's website.. with a berry dessert..
Does anyone know.. can i just buy the cream of coconut and whip that?

Yep, you did something deliciously wrong! They were so yummy that my daughter (non-vegan)ate almost half the pan!
It was such a nice treat, thanks for sharing!

About the soy ice cream - sounds yummy but I dont need any further temptation. I have seen a non-dairy cream replacment that can be used for whipping in my local organic store but have not tried it. Next time I am in the store I will look to see what the main ingredient is. I tried the soy cream cheese and i dont really like it which is great. Helps me keep lower fat (if only I stay away from these brownies). No more brownies until christmas now.
