Vegan cookbooks?

Can anyone recommend any vegan cookbooks with recipes that are tasty and easy to moderate in preparation?

Thank you! That's a good start for me. I've stuck with the program so far, but I've only found a couple of dishes that I've really liked so I'm trying to find others.

If you do not have the 21-Day Kickstart book, it has easy recipes w/ easy to find ingredients.

I just bought "Everything Vegan" which is a Vegetarian Times cookbook. Dr. Barnard wrote the forward. I read it on my way home on the train today and am excited to try many of the recipes. As a cookbook collector, I always look for cookbooks with great photos and this one has some! I borrowed another vegan cookbook, "Appetite for Reduction" from the library last weekend. It's OK, too, but I like Everything Vegan better. I am trying to convince "America's Test Kitchens" to do a vegan cookbook...or at least do some vegan recipes on their website. We'll see. Anything by Dr. McDougall and his wife will have very healthy recipes ... and I like Isa Chandra Moskowitz's books (Vegan with a Vengeance, Veganomicon, Appetite for Reduction) except she uses more oil than I am comfortable with, so I modify her recipes.

If you like Latin food, there's a great cookbook called Viva Vegan by Terry Hope Romero. The recipes are super easy, yet really authentic tasting. Another one that I like is Vegan Soul Kitchen. Some of these are low-fat, but not all of them. Just got the 21 Day Kickstart book and I really like that, too. I'll always have a soft spot for Veganomicon, since that was the cookbook that really piqued my interest in vegan cooking. I liken it to the Joy of Cooking for vegans - it covers the basics, but also lets you branch out to try more adventurous fare.
