What is your food today Tues Jan 12?

Hi All, Well today is a long work day for me.. till 7:00 pm.. so i am just doing the leftover scene.. I made enough food yesterday for almost the whole week.. b-oatmeal w/cranberry & apple l-waa laa leftovers (beans greens & whole wheat pasta) d-left over kung pao.. snacks.. bannana & pears. i was looking at the 21 day meal plan.. that mexican corn salad looks good. i am definately going to add it to the menu soon! has anyone tried it? what do you think? what are you eating today???

Good morning all! I have made the Mex Corn Salad. It is very tasty. I like to add black beans to mine (rinsed and drained) to add some oomph, and then have it as a main meal. It is really good with added veggies and wrapped into a burrito too.  Today I am going to have oil-free hash browns with spinach for breakfast. And my 1 cup of coffee I allow myself. Lunch will be salad bar gone wild I think. I will hit the nearby grocery store and fill up on greens, but also will bring my own salad dressing and some beans and baked tofu cubes to add because they don't include those things at my salad bar. I am going out to dinner tonight with a friend. She chose an Indian restaurant, where I'm sure I can find something good. Any suggestions for dining out at an Indian restaurant?

b: usual l: same as yesterday, red lentil soup and salad d: unknown, we might just use up some of the various leftovers we've got in the fridge snacks: apple, banana yup, I'm a creature of habit - it's easier that way when I have to do breakfast and pack lunch first thing in the morning when I'm not quite awake  --Deb R

Morning: Smoothie with lowfat soy milk, frozen banana, carob powder, flaxseeds, date, maple syrup and ice Mid-Morning: whole grain bread with a little maple syrup and sesame seed paste drizzled (about 1 tsp) Afternoon: a stew with mixed veggies, beans, and corn in tomato sauce and fresh herbs over brown rice Mid-Afternoon: apple (maybe) Evening: leftover whole grain pasta with marinara sauce and eggplant from a restaurant (vegan, yes, low fat - not so much... ) Snack: whole grain pretzels and dried fruit (a serving of each, if that) Djuna

Oops -- today is January 11! I was conscious of it when I saw your post title because they were talking about it being 1/11/11 today on the radio. I had hash browns, no oil, and high-pulp orange juice for breakfast. Have Italian lentil soup, a clementine, and a banana for lunch, and was planning a pasta dish for dinner, but if it snows and I get out of work early, I am going to make a longer-cooking barley and rice dish instead. (I don't follow the menu plans because I have tons of cooking books and magazines to use).
Don't make a New Year's Resolution...make a Decision!

When I get Indian I always order the Chana Masala (chickpeas and potatoes in a curry stew). I've never seen it not be vegan at an Indian restaurant. They almost always have a vegetarian section on the menu to help you out and some might even mark which dishes are vegan. so yesterday was a near perfect day! the only thing i had ``off plan`` was a couple crackers with almond butter and banana after dinner. needed something sweet.  buut today will be good! bfast is going to be cereal with almond milk, and grapefruit. lunch and dinner i have packed to take to work, honestly im not sure which will be lunch and which will be dinner lol but sitting ready in the fridge i have mex corn salad fresh made black bean and salsa dip to use on my tacos with tomato and lettuce. then i have a nice big salad with lentils and millet. i`ll grab an apple and raisins for a snack. and there we have it! hope everyone has a wonderful day! update: dinner tonight will be leftover pockets - take the leftover stuff in the fridge (veggie chili, broccoli and not cheese sauce, rice and veg, etc) and wrap them up in whole wheat dough rolled out thin and bake until the dough is cooked and the insides are hot. Yummy! Ever notice how just about every culture has some form of dough wrapped around some sort of filling? ravioli, pierogi, dumpling, empanada, etc. --Deb R

so far today I've had: -coffee, apple -1 pc. whole kernal rye bread topped with t.joes better'n'peanut butter, staw. spread, sliced ban. -fresh pressed apple juice -bean burrito with avoc. and olives -last of the tabouleh & tofu pad thai tonight will be simple because I want to go to a movie, so some brown rice, salad, veggie burger

same b- shake lunch-no egg salad sandwich on Dave's Killer bread arugula/cherry tomatoes, orange d- shepard's pie topped with "colipots" a recipe I got from Isa Chandra Moskowitz, mashed califlower with potatoes

Breakfast: oatmeal with pumpkin, and pumpkin pie spice and cinnamon Snack: Kickstart Mango Delight Smoothie- tasted fantastic! Lunch: corn tortilla quesadillas(1st time I made- idea from PCRM video I just found - with whole wheat tortillas but I just had corn at home) Dinner: Kickstart Simple Bean Tacos, and Sweet Potato Fries(cut up sweet potato to look like fries, sprinkled on garlic powder, salt, and paprika, baked 10 minutes, broiler 3 minutes) first time I made them - Wow are they good....and I hate the taste of sweet potatoes. - not anymore! This is so much fun trying new recipes. I don't think about what is not part of the diet, I focus on all the great foods that Are part of it. So many new foods and meals to try..it seems endless.

It's been a long day for me too. I had to make cupcakes for a work party tomorrow - and I decided to just go ahead and try a vegan cupcake recipe. I'm not going to try an "trick" anybody, but I'm hoping people will have an open mind. My husband is scarfing up the few I set aside for him - so they must be good. I need to go grocery shopping, so I'm using what is left in the house... B: Kashi with almond milk L: leftover buckwheat soba noodles with stir fry veggies S: 2 slices bread, not sure why just was hungry! D: Brown rice, stir fry Bok Choy with can of beans and variety of veggies

I lost my wireless connection just as I was thinking of staring my portebello mushrooms out of the fridge for dinner. So I didn't have the recipe - I guess that will have to wait until tomorrow.
