Zoe, I'm not a good one to talk about night time snacks. I think I've been doing something wrong in that department - morning fasting glucose levels are higher than I'd like. It's either pumpernickel bread or non-dairy frozen dessert (indistinguishable from dairy ice cream). I have to figure it out and change or cease my snacking.

A non-dairy frozen ice cream like dessert likely has a pretty high fat content and that could very definitely affect blood sugar levels (check out Dr. Barnard's book for the whys and wherefores and connection between dietary fat intake and glucose levels). I'd remove BOTH the bread and the dessert for a few days and make sure the levels go back to what you'd expect them to be. Then add in one item and check it (maybe do a couple days). Then remove that item, wait a couple more days, add the other item, check it a couple times. It could be one item, could be the other item, could be both items individually, could be the combination of the two items in the same day.

A good snack depends on what it is you're wanting or used to and what is appropriate for your situation. For instance, as a diabetic, I probably wouldn't want something with much in the way of carbs for a bedtime snack but if glucose isn't an issue, maybe multigrain crackers and hummus. I've used cut up veggies (celery, carrots, etc) and hummus as night time snacking, and even multigrain crackers and hummus if my glucose levels are lower than I want at that time of night. A serving of non-dairy yogurt with fruit is another good snack. Fruit in general is usually good. Depending on your situation, a handful of nuts and dried fruit can be good, as can some air popped popcorn (sprinkle on some nutritional yeast for a salty cheesy flavor)
