Complete protiens
Posted Thursday, January 28, 2010 at 1:37 PM
I was reading in one of my older cook books about completete protiens. Basically how you have to pair a vegan protien source such a beans to a complex carb. to get a "Complete" protien. Does anyone have anything to add to that? Or have a better clarificaion or understanding of it? I wonder then..........do you have to have a certain # of these combinations every day? If you have soy milk in whole grain cereal is this the same type of complete protien because the milk is soy? What if it is rice milk? I am curious because I created a menu this week for my family and would like to participate with Shanna on the forum menu (I don't want her to get burned out) but Im not sure what needs to be included everyday or even if it matters.

Good question. The complementing proteins idea is out-of-date information. Let me try and summarize what they know now. As long as you eat a varied diet throughout the day/week, you will get all the essential amino acids you need. As you have probably gathered, some plants are lower in some amino acids while other plants are higher in those same amino acids. This is probably why traditional dishes usually consist of beans AND rice or beans AND corn. Fun fact: corn was traditionally ground on limestone because what is lacking in corn can be found in limestone (brilliant!). Where one is weak, the other is strong. But what recent research has shown is that you don't have to eat these foods in the same meal. Here's a quote from the American Dietetic Association: "Research indicates that an assortment of plant foods eaten over the course of a day can provide all essential amino acids and ensure adequate nitrogen retention and use in healthy adults; thus, complementary proteins do not need to be consumed at the same meal."

Very, very interesting. I suppose I should update some of my cook books. I must admit, I would have a hard time parting with some of them. Learning proper nutrition and learning to decipher labels is mind boggling. No wonder so many people don't bother. It's work. Worth it..........but work. I saw you quoted in a recent Better Nutition magazine (If not that one.....one similar). How fortunate we have been to have the use of yur knowledge. Thank you.

Thanks for the props. I consider myself lucky to glean from all of you! Just wanted to add - Don't throw away any cookbooks. This protein complementing thing is not a deal-breaker. And who doesn't love beans and grains together anyway?

Yes, this one dies hard! And plant foods not "incomplete", they are just "deficient" in some aminos, which can be so easily complimented by the other foods eaten and the amino acid pool circulating in our bodies. It's alwasy amazing to get the question "where do you get your protein?" Patience, I know. Here's a must-read from Dr. McDougall on this topic: http://drmcdougall.com/misc/2007nl/apr/dairy.htm Lani

Wow.................what a great article (or paper I should say)! So interesting. Who would have thought that over eating animal protien caused osteo.????? Thanks so much for turning me on to that one. It is true though..............how many protien deficient people do you know? I don't know even one. Vegan or otherwise.

Sure Bluesgyrl! You can get lost in the McDougall archives - amazing material, well researched and documented - and always filled with common sense in ways you may not have put it together before. I find myself referencing people to his reports quite often for full info. Lani
