What R U eating Thurs April 21st?

Hi All, Doing great.. loving the kickstart... how are all the newbies doing? Do you feel confident you can feed yourself? b-cereal & coffee l-soup & corn muffin d-baked potato w/veg currey over the top s-frozen fruit bar

I am moving, so I am all over the place in terms of what I am eating, among other things . B leftover zucchini scramble made into tacquitos (small corn tortillas), with some added pretend cheese and a few crumbs of leftover facon bacon (tempeh) L probably the rest of the zucchini scramble with some leftover bok choy w/orange glaze and a sprouted grain english muffin D I am going to try the lentil artichoke stew, if I can remember to fetch that can of artichoke I already moved and bring it back to where the pot still rests.

I want to try the lentil artichoke stew too! You will have to let us know how it turns out. My parents have been visiting for a couple of days, but they are leaving today. Hopefully taking their SAD leftovers with them. b: 10-grain hot cereal with raspberries, maple syrup s: watermelon l: big ole baked tater topped with mixed veggies (frozen) and a spray of braggs, nutritional yeast. s: TBD. I have an apple. Or Popcorn. d: "Snap meal" = frozen veggies (mixed), beans, tomatoes with seasoning (maybe tex-mex or cajun today) over brown rice. Or maybe quinoa. I love OPTIONS!

b: cereal and plant milk l: leftover corn and mushroom chowder with tossed salad d: not sure yet s: apple (already ate that) not sure what else I'll have - something this afternoon but I forgot to put my usual other fruit (banana, grapes, etc) into my bag this morning. so we'll see. For some reason, I'm actually having a harder time this go-round than the previous two kickstarts. Familiarity breeds contempt maybe? --Deb R

B: Steal Cut Oatmeal with honey and ground flax seed L: Left over basmati rice, refried beans and salsa along with spinach from my garden D: Asparagus, Sweet Potato and Applesauce S: Banana, carrots and pumpkin seeds

@cch22 - I love making fresh juice from whatever's in the kitchen, whenever I'm in the mood... today was a juice day. I definitely don't do that every day, but maybe one or two days a week I'll replace a meal with juice, just because I like it. And, it cleans out the refrigerator so I can go to the farmer's market this weekend!

cch22: I tried lemon on steamed broccoli as you suggested and it is surprisingly tasty and good! Thanks! Great idea.  I didn't use olive oil but sprinkled minced garlic from a jar(no oil) over asparagus and roasted it for 10 minutes and it is excellent! It was delicious so I ate all of it. Thank you. I had to watch this video: http://www.youtube.com/watch?v=d-3-Ebi9Ikc first on how to trim asparagus because I never cooked asparagus before. Hope to roast brussel sprouts as suggested very soon. gotta tell you folks.. my mom used to grow asparagus. When it is fresh from the garden, it is AMAZING .. one of my all time favorites. She sold the house with the large asparagus garden.. From what i can see asparagus is one of the easiest things ever to grow. You plant it once and it comes up every year. I guess you can't eat it the first 1-2 years cause either it's not big enough or it needs to take hold. The important thing is that you don't mow it down. If you have room, you might consider putting in some asparagus. I don't think you will ever get anything in a store that tastes like fresh. Also.. about the lemon on broccoli.. that is one of the few things were i want to squeeze a real lemon.. not use the bottled stuff..

That is so interesting that asparagus can be grown in a garden. I had no idea. And thanks for the tip on using real lemon on broccoli.
