What's Cooking This Weekend?

Another weekend. Another two days to be inspired and cook.

Right now I have a big pot of Alton Brown's Lentil Soup on the stove. It smells SO good. I can't wait for lunch.

Tonight I am making spinach lasagna with tofu ricotta. I have fresh basil galore and can't wait to use it.

Tomorrow I may do a squash in the crock pot (no water, low heat, 4 - 6 hours depending on the squash).

What are you cooking up?

Had the Almost Instant Black Bean Chili - yum, with the Easy Cornmeal muffins - a big yuck!!! Ugh, will not be 'starring' those for a repeat! Oh, and had the fruited quinoa for breakfast - that was really good. I've only had a couple of recipes from this program that have been yucky for me. All in all, I've thought they were really tasty.

For dinner tonight, we are making a pasta dish with shallots and garlic sauteed in veggie broth (no oil), fresh organic basil, 7 diced organic tomatoes, roasted red and yellow peppers and some field roast sausage (vegan and soy-free). We also put in some dried organic Italian herbs and red pepper flakes.
