Miso Paste

I just bought my first miso paste. Anybody have great suggestions for using it? I was just going to cook some noodles in it to try it, but thought I would see if any of my new vegan friends had some more creative ideas.

I always like to add seaweed, tofu, and noodles. But miso also makes a good addition to lots of different stews.

But here's my real tip: add the miso at the end as overheating it kills some of miso's live properties (naturally occurring probiotics).

I'm a BIG miso paste fan and use it a LOT in soups! I'll put carrots, onion, celery, and chopped kale in the pressure cooker for 2 minutes, bring it down, add barley or rice, beans...and then take some of the hot water out and mix it with white miso (my fave) into a paste and stir it back into the pot (as Susan mentioned, don't boil it, add it at the end). It is SO savory!

I've also used it mixed with tahini as a tangy delicious spread for crackers, rice cakes or bread. It mixes up well with same for dips, and as a sauce for veggies and grains.

I'm glad I asked, I would have never known not to over-heat it. Was planning on adding it to the boiling water before the noodles! Thanks!
