Question about freezing bananas

Hi all,
I know this is a weird question, but do bananas continue to ripen when you freeze them?

If you've been following my menus in the menu threads, I like to make a smoothie in the morning with frozen bananas (I basically buy fresh bananas, peel and chop them into 3-5 pieces each and freeze them in freezer bags). The problem is that I'm currently living in Israel for a year or so and even though most of the fruits and veggies here are excellent, bananas is something that seems to be always a miss. Usually they are extremely ripe, even when they aren't green, and they get brown and mushy very quickly because of the humidity here (this is one reason why I freeze them).

Today I bought some bananas that were yellow skinned with brown bruises all over them. I thought they were ripe but when I tasted one, I found it was not ripe at all and not sweet. I went ahead and froze them anyway because I only tasted them after I had peeled all of them and I didn't want them to go to waste. I'm hoping they will ripen in the freezer.

No, bananas won't ripen in the freezer-that's why you put food in the freezer, to keep it from spoiling. I guess you can use the bananas but will need to add dates or some sort of natural sweetner when you make your smoothie.

Agreed - they stop ripening. But take them out of the skin before you freeze them. Perhaps that is obvious.

If the bananas aren't any good don't buy them. I'm sure the oranges make up for it. Lucky you, you get to eat some of the best hummus and pita in the world, plus falafel.

Ha! Ha! It wasn't obvious to me, for one. I've never tried to freeze bananas, but it's nice to know it can be done. I usually use frozen fruit in my smoothies, so that makes them nice and cold and yummy! It also means I can have blackberries, strawberries, mango or whatever smoothies all year long.

Could it be that you bought a plantain instead of a banana? Try grilling it and see if it gets sweeter with some caramelization. I know that doesn't really help your freezer problem, but it does give you something to do with the rest of your not-sweet bruised bananas.

Ahah! You maybe right-plantains look a lot like bananas. They are usually bigger and denser.
