Vegan Posole Soup

I know a lot of you out there work and don't have the time or inclination for cooking when you get home so I thought I would share one of our vegan "fast food" meals. Vegan Posole Base 14 oz can mild enchilada sauce 14 oz can pinto beans, with juice 14 oz can hominy, with juice 14 oz can chopped tomatoes, with juice Pour all of this in a stock pot or dutch oven and then add whatever blows smoke up your soup skirt. Sometimes we add frozen corn, chopped onions, chopped peppers... whatever we have. Now turn on the burner and bring it to a simmer. Cook until piping hot and any added veggies are the texture you like. Ta Da! It takes 5-10 minutes to prepare, tops. Garnish with fresh lime wedges and cilantro or avocado or baked corn tortilla strips. Again, whatever makes you oh so very happy!
