Just finished 21 day vegan kickstart!
Posted Sunday, September 18, 2011 at 9:23 AM

Good morning!! Today was day 21 for me on the vegan kickstart! Very Happy I feel great! I lost 4.8 pounds. I plan to continue with this program. I wish I would have lost more weight especially since I work out for an hour 5 days a week. My weight lifting instructor told me I would never see muscle definition without eating meat. I know she meant well but I dont believe her. I intend to prove her wrong. I have at least 60 pounds I need to lose...I am thinking this new way of eating for me is the answer! I encourage everyone that is trying out the vegan kickstart to keep at it. You will continue to feel better with each passing day! I did lapse and eat meat 2x during my 21 days but just jump back on and dont feel bad! We can do this!!!!! Very Happy

Thank you for your post! It's very encouraging. I am on day 14 and loving this way of eating. I've lost a bit, not a lot, but I feel so good, energetic and just 'clean', although I don't know how to explain what that means! I too exercise everyday, and I find that my staminia seems to have improved.

I am loving most of the recipes, and finding out new things and learning how to cook and eat new things. My husband is a meat eater, not a big one, but he does like to have some steak/hamburger/chicken/eggs, so we compromise. He eats the plant based foods I cook, and occasionally I'll cook him his 'devil' food!!! ha ha. Little by little, precept by precept, he'll get there!

Good luck on continuing. Did you follow the menu plan and what are you going to do now? I have to say that has been a big help to me, left on my own devices I'm not sure I could come up with such good things to eat. I may just start over on day 1 when we're done! Confused

Thanks for reporting in Sherismiley! Please do keep it up, for you and for that weights instructor. Plant based eating is becoming more popular by the day, it seems, and it is time we started gently, but actively, working on the professionals who are advising others that what we are doing is not possible. Keep us informed... I would love to hear what your instructor says in a few months.

I can attest that you can build great muscle definition while being a vegan. I did it myself, and it wasn't hard at all! you just need to make sure you're eating a nutritious diet and lifting weights. muscle is much more about the type of training you do than it is the way you eat, but those trainers would love to make you believe otherwise! Thanks everyone for your wonderful words of encouragement!! I do intend to keep working out...I know the other day my instructor came up to me and said "I dont know what you are doing but keep it up..you are looking great!!" ha...that was BEFORE I told her I had not had meat or dairy in close to 3 weeks!! I did see Forks over knives!loved that documentary sooo much!! It just helped to enforce what Dr. Neal Barnard says. I did want to recommend 3 books that are really helping me make the transition to eating vegan: The Happy Herbivore Cookbook by Lindsay Nixon...this book has great recipes which are easy!! Another book that has helped me is The 30 day Vegan Challenge by Colleen Patrick-Goudreau..a wealth of information when you are just starting out on the vegetarian path. And finally...Breaking the Food Seduction by Dr. Neal Barnard. His books have opened my eyes soo much...never knew cheese and dairy had addictive properties. When I got off cheese I looked in my fridge...I had 10 different types of cheese!!! Yes..I was hooked on cheese...no more!!! The cravings are gone!! I am soo excited about this new way of eating!! I have soo much energy and feel Fabulous!! I know this 60 pounds I have to lose wont be sticking around on my hips too much longer!!!! Very Happy
