tasty mistake

Today after work, I made two new recipes, the Mexican corn salad and the carrot & red pepper soup. I sat down in front of the computer about an hour & half ago with my dinner, a bowl of each item. I forgot to turn the range off. I just went to put the soup in the fridge only to realize it's been simmering the whole time (which from a food-poisoning stand point is probably a good thing). The soup was reduced by half of what was in the pot when I dished it up. I tasted it, sure it was burned and needed to be tossed, and holy smokes!! IT WAS WAY BETTER THAN WHEN I ATE IT FOR DINNER. So, the next time I make it, I will intentionally reduce it by half.

Thanks for the tip. I loved the soup last week, and I was planning on making it again tonight. I will let it simmer longer and see how it goes!
