Because the healthiest foods on the planet are mostly carbs - fruits, vegetables, whole grains, and legumes. Fiber is a carbohydrate! This is not a low-carb diet, quite the opposite.
We're shifting people away from animal products to plants. The result usually is more carbohydrate intake and less fat intake. This is how the healthiest people eat and live disease-free lives.
