I have Colleen's Joy of Vegan Baking and love it.

There are so many good vegan cookbooks now but the 2 I go to time and again are:

The Happy Herbivore - Lindsay Nixon
The McDougall Quick and Easy Cookbook - John and Mary McDougall

Let food be thy medicine and medicine be thy food - Hippocrates.

I love Happy Herbivore! Smile

I use that one and La Dolce Vegan a TON (love Sarah Kramer's recipes). I also use Veganomicon, Supermarket Vegan and Appetite for Reduction quite a bit.

Dr. Barnard also has a cookbook - Get Healthy, Go Vegan. Also good is Blissful Bites by Christy Morgan. I love Happy Herbivore too! I use it all the time.
