I am looking for a better menu for Easter Dinner

Does anyone have a suggestion for a fancier Easter Dinner than the one planned for April 8, Easter Sunday?
Loving the meals so far.


I just changed the subject line! Couldn't figure out why so many people read my post but didn't answer. Then I realized that I had posted "a better menu for Easter dinner" rather than asking for one.

At our house we do a simple brunch: fruit, veggies, and salads. Our main course is a sandwich or grilled or not, made up of veggies and vegan lunch meat (optional). We are going to use Dave's Bagels this year because the fiber content is really excellent and love the quality. BUT, we still set the table beautifully, using the pretty spring linen and of course the nice china and silver comes out too.

Thanks BCMomma3. Since I asked, we were invited over to friends. I'm bringing the relish tray and some tofu quiches in muffin form I found on FatFreeVegan.com

Also sorry for all the people I led astray thinking I had a menu for you rather than I needed one. I should change the subject line!

[i]I am making a vegan sweet potato casserole, stuffed peppers, and a vegan apple pie, and bringing them to Easter dinner, and who knows? Perhaps my family nembers will enjoy the dishes as well!
