What is your food today Thurs Jan 13?

HI So how is everyone doing? Is this getting any easier for the newer people? Are we finding new ideas of what we can eat from this thread? I have. I crumbled bean patties for nachos, put cocoa in my oatmeal with a banana and just saw how easy it is for some of you to throw together a meal. Today for me is oatmeal, soup, bananna, pineapple carrot muffin, bean pattie & salad. I am still working on all the food i cooked on Monday. I am glad it has stopped snowing for a few days! Cynthia

actually, I'm starting to lag a bit...need to get back on point. b: cereal and plant milk l: leftovers (still have a bit of broccoli quiche and lentil soup in the fridge) d: black bean meatballs and tomato sauce over whole wheat pasta s: banana later this morning, not sure about afternoon snack Deb R

thanks Deb! you know I actually forgot about being able to have the simple things like speghetti!! I think i will plan on this this weekend.. might even break up one of those bean patties, add some mushrooms and green peppers. With a simple tossed salad I am good to go.

haahaa like i don't have enough to cook!!...12 hours on monday!! boxed ones are just so easy... so now i must think of noodles.. are they that much better??? are they easy?? do i need one of those machines??? is it like eat pray love, with all the noodles hanging all over the place?? i do have a clothes drying rack that might work..... one thought... if i buy the fresh ones in the store. do they taste like homemade? so that way i could compare homemade to box to see it i want to give it a go.

Yes, the taste is amazing - we had a guest from Italy give them two thumbs up when he was here (and we topped them with a sauce made using Quorn crumbles and he had no idea it was vegetarian!) Never saw EPL but hubby has an ingenious method of hanging them. He uses the stackable cooling racks upside down (so the legs are upward) with bamboo skewers across them with the pasta hanging. You don't necessarily need a machine - a floured surface and a rolling pin works just as well. Then he uses a big chef's knife to cut them into linguini type noodles. Round spaghetti, elbows, and other shaped pastas need an extruder. Flat pasta like linguini, lasagna, even bowties can readily be done with basic kitchen equipment (rolling pin, knife or pizza cutter, etc). It is VERY easy to do - flour, water, a little salt, a dab of oil, make a dough, rest it, roll it, cut it, cook it. Takes all of 2 to 3 minutes to cook when it's fresh (as opposed to 8-12 or whatever for dried). One thing we haven't tried yet that we want to at some point is putting the quinoa through the grain mill to make quinoa pasta. Have to check out recipes though as I'm sure the proportions are probably a bit different for different grains. We love being able to have that level of control over our ingredients. --Deb R

HI Deb.. Can you pass along your favorite recipe & instructions.. I saw on tv cooking show.. mound the flour to form a well, put stuff in the well, knead.. roll... cut ..dry... cook.. so how long does it take ..? how long to dry? can it be stored a day or two? might be a fun snow day activity.

I'll get the info from DH when I get take my next break from work and pass it along. One good thing is that it doesn't take long to dry. It basically 'dries' as you cut the next section of dough (you divide the dough and roll and cut it in sections, very similar to the way sugar cookie dough or biscuits are handled in 'batches' so the dough isn't getting over handled). It's fast and easy enough that it's a 'fall back' option for us. --Deb R

Okay here it is - this is the vegan recipe (eggless). It's originally from allrecipes.com. I'll put our modifications/changes/notes in (parens) 2 cups semolina flour (we use whole wheat most of the time) 1/2 tsp salt 1/2 cup warm water (closer to 2/3 cup works better with the whole wheat) In a large bowl, mix flour and salt. Add warm water and stir to make a stiff dough. Add more water if it seems too dry Pat dough into a ball and turn out onto a lightly floured surface Knead for 10-15 minutes Cover (we just flip the large mixing bowl over it) Let dough rest 20 minutes Roll out dough to 1/16 inch thick, work with 1/4 of the dough at a time keeping the rest covered to prevent it from drying out Cut into shape (a long non-serrated chef knife or a pizza cutter works great) Cook 3-5 minutes (we stay nearer 3 for al dente - never cook pasta past al dente if you want to reduce the glycemic impact) Drain and serve

so basically you can cook it when you are done cutting it all up? how much does 2c flour make? 4 servings? can i cut it in half or store it for a few days? thanks!

We have portions hang while the rest of the portions are being cut but that's it, cook right away. We get probably 4 to 6 servings out of this recipe - it says it makes 4 servings but that depends on how big your serving size is. We usually cook it all up and then reheat it as leftovers (we usually mix the sauce into the pasta when storing it, or toss with a little olive oil to keep it from sticking and clumping). It also works wonderfully with some steamed broccoli and the not-cheese sauce (leave out the red peppers and it looks like an alfredo sauce!) --Deb R

So last night we decided to go out for mexican food, which I love. I was worried about avoiding the cheese/sour cream because this particular restaurant puts it on just about everything! About the only thing on the menu that was workable for me were the bean tostadas (2 on a plate). They were very good with beans, lettuce, salsa, and guac. piled high on each tortilla. Plus I had the chips & salsa before, along with a margarita. Yeah! I did good and am happy with my self-discipline. However, I am still full from all that food, so today's eating will be minimal, like fruit whenever I get hungry (not for a while I'm sure). Then salad for lunch-whenever that will be! Tonight? I have no clue yet.

oh pam the mexican food sounds yummmy. Tostadas are one of my all time favorites! they are like a big, good for you, nacho.. with no cheese.

after all that pasta talk, DH decided to call an audible: he's going to deconstruct a chili corn bread. Instead of making chili then adding it to the corn bread, he's going to just mix the beans, corn, peppers, spices, and diced tomato into the corn meal for the corn bread. Should be yummy. Oh and for the record, lunch was the last slice of broccoli quiche with a tossed salad on the side. --Deb R

After hearing about good Mexican food, and watching the video for making Rip's excellent veggie burrito, I've decided to do that for dinner tonight. I think I have most of the ingredients, and I'll improvise with the rest. So, that's dinner. Had hash browns with spinach for breakfast. Oil-free of course. And a banana about an hour later. Lunch was leftover veggie stew on brown rice. Curry and cauliflower and peas and potatoes and garbanzo beans, all nicely stewed. Yum! I took a walk to the coffee shop and got a special coffee drink with soy milk (sugar-free, soy caramel macchiato) because I was just having a bad afternoon and needed a pick-me-up. Well, just blech. It just tasted awful. After many months of eliminating artificial sweeteners from my diet, I guess my palate has changed. The sugar-free syrup was nasty. Next time, herbal tea for me I think.

If you're diabetic, check the ingredients carefully on those herbal teas - many of the popular brands at coffee shops contain licorice root, which, while vegan, may spike blood sugar (and blood pressure as well). --Deb R

Breakfast: oatmeal with mango and cinnamon - refreshing Snack: Smoothie made in Cook's mini-blender with 1/2 banana, frozen blueberries, a peeled orange, little bit of flaxseed, and rice milk - I just made this up today - tasted so good! Lunch: Leftover curried lentil soup(frozen on the weekend) Dinner: Leftover spaghetti squash/tomato/pepper/eggplant(which was frozen last weekend) on whole wheat angel hair pasta with frozen broccoli added to pasta while cooking Dessert: Smoothie made in Cook's mini-blender with raspberries, cocoa powder, and water cch22: glad you liked cocoa powder in oatmeal never tried rice milk or mango before Kickstart-glad I did

Today was another rough day - there's some family stuff going on that's making life a little crazy right now. But I'm still keeping up with the plan and making decent choices I think.
