Has anyone tried making no cheese sauce . or nacho sauce by just sticking it all in the vita mix and letting it do all the work???

just a thought, since they say you can make soup in the vita mix by putting everything in, then letting it run for 5 min.. it actually cooks the soup right in the vita mix..

why not do the same for "cheezy" sauce???? will it work???

I can't imagine why it wouldn't. I haven't looked at that recipe but I have made a "cheese" sauce before with cashews and pimentos and used my Vitamix. I have made LOTS of things in it and it is hands down on of my favorite kitchen items.

Vitamix, ceramic knife, mandoline, comal/griddle, rice cooker, crock-pot. These are the most frequently things used. (not in that order) Seems like I forgot something but since I Haven't had a kitchen for almost a year!

we don't have a vitamix but we use our blender. One 'trick' hubby uses is to just use unsalted organic cashew butter in lieu of crunching through the cashews ourselves. Mixes it all up in the blender then pours it into the saucepan to heat and thicken.

yeah i use a saucepan too..

i am just thinking.. i am a library director. we have a program where kids create dvd's.. i am thinking of a five week summer "healthy eating" program...

i don't have a stove..but i may be able to get a vitamix for the kids to use.. they could make soup & "cheese" sauce & smoothies.. along with salads.. I could make the pasta at home, rinse it & bring in gallon baggies.

just thinking....

the dvd's they create are shown before school events in the auditorium, while the parents wait for the show.. videos to school website & maybe utube.

they are also shown here in the library to the community.. Cool Kids Cook!.. could be the name...

also they could enter their foods for the 5 weeks to one of those online programs..

kinda excited about the program.. it's for 3-8 grades.. no sharp objects.. no oven.. no stovetop..

if soup works, pre-cook some beans and make chili (healthy, low fat, low sodium, veggie chili that is)

I don't know what the demographic is, but playing to the ethnicities of the group and showing how to make their usual home cooked meals healthier (sub beans for meat, adding veggies, reducing fat and sodium) would benefit whole families.

Cythina!! What a great idea! Nice suggestion Deb, if the foods are relatively familiar to start with, they are more likely to try it!

Oh, had another thought: is there any kind of community agriculture or local farmer in the area that might work with the program to maybe take the kids to the farm to see the veggies and then take them back and make something yummy with them? Even if you just go out to the farm and videotape it and show it to the kids (if transportation and liability are issues).

A few wire egg slicers might be useful - you can cut mushrooms, cooked potato (white or sweet), strawberries, avocado, kiwi, banana, anything about the size and texture of a hard cooked egg without using sharp edges (our son has been using those things since he was about 3). The pieces come out fairly uniform.

Actually up at the school they have a greehouse..and one of their 5 week segments is spouts and seedlings.. where they grow food & sell it at the folk school in the summer.

Egg slicers is a great idea!!

Cool idea Cynthia - my kids would love it! Several years ago our library did a garden to go with their summer reading theme. It was a Victory garden. They kept it up for a few years. Funny how my kids loved to go work in that garden, but I couldn't get them in ours at home!

I have a Blentec. It came with a cookbook that looks pretty good. I haven't used it much because I have been trying so many other sources of recipes. Maybe they would have some recipes online? I have heard that the Vitamix recipes are not too good (from some website and from our own Theodore).
