I've just found this site and am intrigued about the vegan life! However, when reading the menus, it appears that most meals have way more than the 15g of carbs that my dietician recommends. What to do?

That is an incredibly small amount of carbohydrate. It would not be compatible with a plant-based diet. For example, one-half cup of legumes would have 15 grams of carbohydrate. I would read our Website (www.PCRM.org) and decide if a plant-based diet is something you are ready to adopt. You are not going to be able to do it while following your dietitian's advice.

The 15 grams of carbs your dietician is dealing with is the typical American white flour and rice and such. It's a bit of a different "animal" (LOL) when you're eating whole grains, fiber and all, alongside lots of whole veggies and fruit and reducing fat intake significantly. Quite honestly, it can be shocking and a bit scary-feeling to look at something like this and think "can I really eat THAT?" I'm also guessing that you're dealing with diabetes - me too (type 2, metformin, diet, exercise no other meds). I saw Dr. Barnard on PBS then read the book Reversing Diabetes and it made sense all around - not only that, but it's also improving hubby's cholesterol and blood pressure issues and we're both slowly and steadily losing weight. The best thing I can say is trust your meter. Do paired tests (before and after meals) to find the best combinations for you. It may be that meals heavy in brown rice are still not your best bet - so use quinoa instead. Or, it may be that some other food or recipe isn't your best option, so eat less of that or substitute something else. The kickstart is not the same as those "3 weeks lose one dress size if you eat exactly what we tell you" plans. It's designed to be flexible enough for a lifestyle. --Deb R

Sorry! I misspoke! She recommends 4 carb choices from the pyramid per meal. Is this in line with vegan eating?

Thanks, Deb. Yes, I do have Type 2. I had a quadruple bypass in January and things have really changed for me! I'm also on Metformin with insulin injection at bedtime. I had super readings with the first batch of test strips I used following surgery (90-140 range) but with my recent test strip refill, numbers are running 140-230! I don't feel I can trust my monitor now!

Ahh, yes! Whole grains, legumes, fruits, and vegetables are carb choices. It does sound, however, that your dietitian might be trying to limit your overall carbohydrates. Is that true? Do you know why? As posted above, we would encourage healthful carb choices in any amount you want. But we would suggest avoiding refined carbohydrates and added fats. This way of eating has proven to be the most beneficial for weight loss, diabetes control/reversal, and prevention/reversal of heart damage.

Thanks, Susan! I have a tough row to hoe it seems, but I realize I have to make the food adjustments now or I'll be right back on the operating table. I'm trying to get as much information about diabetes as possible, so thanks for the link!
