What does tahini taste like and how do you use it?

What is nutrional yeast and how does it make cheese?

There is a thread on here called "yeast flakes" that will answer some of your questions about nutritional yeast. You can also use the "search" feature and type in "nutritional yeast" and come up with other references to using it in recipes etc.

Tahini is like peanut butter, except made from sesame seeds. You can get raw or roasted. Raw is a little more bitter. I usually get it though, as you don't usually eat tahini straight.

My favorite two uses are putting it in hummus (traditional ingredient) and thinning it with water, a shot of reduced sodium soy sauce, lemon juice, and a little hot sauce or chile paste. This is a spicy sesame dipping sauce that's great on steamed veggies, as a salad dressing, a sauce for noodles, etc. It's pretty addictive, so do note it's by no means fat-free. A little goes a long way.

As for the nutritional yeast cheezes, the best place to look is in The Ultimate Uncheese Cookbook. Or you can find some recipes online. I sprinkle it straight on stews and anywhere you would formerly use parmesan cheese. It's a different flavor but hits the same spot, if that makes sense. If you like beer, you'll probably love it.

Thank you for the info. I looked for it at Safeway but didn't find it. Well, this vegan thing is getting hard now that I'm back to cooking the the 'man'. Make my plate look like somethings missing. I left last night very angry. But later, when I felt so good from my dinner, I was really happy. I gotta pray about this whole thing and do what's kind for my body, not my plate.

KC, I'm sorry this is such a struggle for you. I really hope you heed the advice posted under the other thread about your cooking struggles, and try to keep it as simple as possible, at least to start. Spaghetti w/ marinara sauce, and throw a couple of frozen meatballs on his if you have to. Bean tacos or taco salad using black or pinto beans. Veggie lasagna. Things that won't seem too "foreign" or different from your usual way of eating. Even a standard meat, baked potato, and veg dinner, but yours uses a Boca burger or you just eat the potato and veggies. Then gradually you can add in new things and try them out.

I am not world's greatest cook either, so I can sympathize. My DH does most of the cooking at our house and he isn't totally commmitted to eating vegan, but he is trying to support me in it. But he has been cooking spicy curries and complicated dishes every night, and last night I couldn't take it anymore! LOL! I fixed Beans and Greens from Dr. McDougall's site (similar to the Southern Beans and Greens from this 21-day menu) and it was surprisingly good since this was only my second time to eat greens (other than spinach). Then for a side dish I threw some leftover red rice and leftover canned tomatoes together and added some onions and spices, and that turned out pretty good too. I enjoyed the simple "homey" food for a change.

I also have a Safeway. I haven't looked for tahini, but I'll bet it's by the peanut butter. That's where the other nut butters are. My Safeway has a small bulk food section and nutritional yeast is not offered, and I don't find it packaged in the natural food section. I go to a local market which has a huge bulk food section to buy it. If you have a health food store in your area, try that. Nutritional yeast has a wonderful cheesey type flavor!!
