Hello to all and a couple of questions

Hello. First time here. I did the April Kickstart with very good results. My BP is lower and have lost some weight. I can't wait for the next one. And, I love reading this forum, so thanks to all for so much insight, tips and support for all of us new to this.
A couple of questions:
I have been making my own version of socca (garbanzo bean flour pancake) for breakfast or lunch as I love pancakes. Am I on the right direction to use these as an alternative? I hardly use any oil to make them, just a light spray for the first one on a non-stick pan. And, I do not use oil in the mixture (as many recipes call for).

Also, has anyone used/tried those plant/fiber based noodles now found alongside the tofu on the supermarket case? I read something about a brand called "Miracle Noodle." Are they any good?

I think you may be talking about Shiratake noodles. I have trouble finding them except at the local health food store. I recently used them for the first time to replace pasta in my dish and I was very pleasantly surprised. I really like them and plan on using them again.

I have tried a couple different versions of those noodles and I don't care for the texture at all. The last ones I tried, not sure which brand, I took about 3 bites and threw the rest out. They were rubbery, felt like rubber bands in my mouth.

I'm not sure about socca – I have never had it. Sounds interesting though, garbanzo flour! Smile

I buy the Shirataki Noodles regularly. They are different from Miracle Noodles, which are harder to find. Both have about the same texture, but Shirataki have more nutritional value (some protein and carbs). The texture is indeed unique, and you MUST follow the instructions on the package for cooking, but I've found them to be a good replacement for pasta if I'm making something that has a lot of other ingredients too, like a pasta salad with lots of veggies.

Hungry Girl has some great recipes using them. You can get her cookbooks at the library. (She's not vegan, though, so you'll need to make some substitutions.)
