What's your food today Fri Jan 14th?

Hi,
today is the last day of the cooking from Monday. I am looking forward to planning next week and cooking new this weekend.

Honey seems to have caught a bit of a cold. It is on it's way out after a couple of days.. but I am probably going to make the broccoli soup.. (vit c)

anyhow.. today is oatmeal w/cranberries, apples, walnuts and soymilk.

lunch is a big ole green salad.

dinner is a black bean veggie pattie and salad.. will look and see if there are any other veggies in the frige to use up...

so what is your food today???

d: unknown - I guess we'll call it "Hubby surprise" Very Happy

snack: multigrain crackers and roasted red pepper hummus (Yum!)

I've been battling a very sore throat since yesterday but today it seems to have moved up to my nose and sinuses. But I'd rather than a bad runny nose than a can't-speak-worth-a-darn throat infection Very Happy.

Morning: Smoothie with banana, light soy milk, carob powder, date, honey, flaxseeds, and ice
Mid-Morning: 2 slices whole grain bread with honey and a drizzle of sesame seed paste
Afternoon: Italian stew (mixed veggies and beans in a tomato based sauce with fresh Italian herbs) over quinoa
Mid-afternoon: Apple (maybe)
Evening: salad with beans and balsamic vinegar/lime juice, mashed potatoes
Snack: a serving each of whole grain pretzels and dried fruit

Breakfast: Vegan Eggs Benedict, Southern Sunrise Smoothie

Lunch: Tex-Mex Chili

Dinner: Mixed Veggie & Hummus Wraps, with Low-Fat Gingerbread Cookies

Breakfast: Oil-free hash browns with spinach and ketchup.

Lunch: (Which I am eating as I type this) Brown basmati rice covered with leftover curried stewed veggies. I've had this most days this week and it is still making me happy.

Snacks: Probably a McDougall cup of soup later in the day because dinner will be late tonight. And an apple.

Dinner: Oh, I don't know! I just don't know. I haven't had pasta in a long time, so maybe I'll throw together a pasta primavera with whatever I can scrounge from the freezer and fridge. Tomorrow is shopping day!

Update on dinner.

Decided to go simple and steam some green beans to have alongside a baked Tofu Sammy. Will dice the tofu, toss with some diced onions, celery and shredded carrots, add some ff vegan mayo and mustard. On an Ezekiel sprouted grain English muffin, with lettuce and tomatoes. Easy.

And a nice Pinot noir. It is Friday after all.

Today was all about the homemade Japanese feast. The rest of my day was pretty boring, but definitely still tasty Smile

Breakfast: Mango Delight Smoothie
snack: apple
Lunch: arnold's sandwich thin with natural peanut butter and sliced banana
snack: Snyder's veggie chips
Dinner: DIY Japanese

so, anyway, "hubby surprise":

he checked cookboosk and surfed a bit and didn't like anything he saw 100% so he decided to use what he knew to build his own recipe. YUM! "black and white soup" - black beans, navy beans, diced tomato, carrot, onion, garlic, other seasoning - deliciously hearty. Thick enough to use over rice (that'll probably be tomorrow's dinner!) but smooth and soup/stew like and quite satisfying.

Breakfast: oatmeal with Aldi's frozen blueberrries

Snack: Smoothie with frozen banana, orange, flaxseed, and rice milk

Lunch: quesadillas I brought with me out on the road(made with Aldi's fat free refried beans); worked so well because they don't need to be heated; unsweetened applesauce cups

Dinner: Ordered pizza takeout with Dr. Barnard's suggestion of no cheese and extra sauce, green peppers, and mushrooms. It actually tasted better without the cheese..sauce was delicious and they did a good job of piling on a lot of veggies

I did this as an experiment because I wanted to feel comfortable knowing that if I didn't feel like cooking or making anything, there is a back-up plan. It worked! Smile

Dessert: Smoothie made with frozen banana, Hershey's cocoa powder, and rice milk

P.S. Pippin, wish I knew how to make those oil free hash browns. Katherine, wish I knew how to make those low fat gingerbread cookies.

B: GF oats with flax, brown rice protein, and mixed berries
S: apple
L: polenta, tempeh sloppy joes the boyfriend made for me, salad
D: Brown rice couscous with chickpeas, zucchini, peas, and red peppers
S: Brown rice cake topped with almond butter and berry preserves

For whatever we lose (like a you or a me)

B - fruit smoothie with apple, banana, 2 kiwi, ground flax seed, 1 cup rice milk - yum

L - fruit

snack - roasted chick peas and goji berries

D - take-out. Asked around and found the only vegan restaurant in town. The food is wonderful, I don't have to worry about whats in it andit's a treat from cooking. I will definately go there again.
