Aww, Happy Easter, Passover and Ostara to all!  (Since we're one-upping. ) I'm perhaps fortunate in that there will be no big Easter meal. Just a blended family get-together for egg hunting with the kids. My boyfriend, his ex-wife, their two kids, and the ex-wife's boyfriend -- wow!

I am taking this for a lunch salad... Black Bean & Corn Salad 2 cups Cooked Black Beans or 1 can drained & rinsed 2 Ripe Tomatoes, chopped 1 Red Bell Pepper ½ Red Onion 1 cup Frozen Corn Kernels 1 (4oz) can diced Mild Green Chiles 2 Tbsp chopped Cilantro 2 Tbsp Fresh Squeezed Lime Juice 1 tsp Chili Powder, mild or hot ½ tsp Cumin ½ tsp dried Oregano Sea Salt Cayenne (optional for those who like extra hot) Put beans, tomatoes, bell pepper, onion, corn, green chilies,cilantro, lime juice, chili powder, cumin and oregano in a serving bowl & stir until thoroughly combined. Season to taste with salt and cayenne. Let stand for 10 minutes for the flavors to develop Serve at room temperature. This recipe is spicy. Adjust as necessary. Can be combined with brown rice & served in burritos.

Happy Easter! Yes, the holidays can be awkward for us vegans. Hopefully this will change someday soon! just going for dessert. Bringing our own of course.

Happy Easter and Passover to all! I just got done making Hot Fudge Cake from www.NutritionMD.org...a brownie-style cake on top and a layer of fudge sauce underneath...which is oozing out. My whole house smells like chocolate. I will take it with me today when I visit friends who I don't see often. They are vegan...and serving dinner. I am so lucky. P.S. A year ago neither my friends nor I were vegan so maybe things are starting to change.

Hubby did actually finally check with his mom via FB (since she messaged him about something) and we never heard back. So, we went to worship as usual, stayed for the brunch (we brought mini vegan quiches and a pumpkin streusel cake) and got the egg hunt for the littles going. Then headed home and relaxed - did some garden cleaning to prep for planting season (most stuff doesn't get planted until close to Memorial Day to avoid overnight frosts), took a nap, started a new book, watched TV with my guys, had some leftover chowder and salad for dinner.
